Transfer the sauce to a container and place it in the fridge to chill. This allows the flavors to intensify and meld beautifully. The sauce can be made ahead of time and refrigerated for up to a week; simply stir before serving and thin with a tablespoon or two of water if needed.
  2. **Roast the Vegetables (Initial Bake):** Preheat your oven to 425°F (218°C). Peel and chop the sweet potatoes into uniform 1/2-inch cubes. Cut the red bell pepper into 1-inch chunks.
