  • 1 head cauliflower cut into florets, about 5-1/3 cups
  • 5 large carrots peeled and sliced, about 2-1/2 cups (see note 1)
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 (15-ounce) can white beans (cannellini), drained and rinsed
  • 1 cup Moroccan couscous (not pearl)
  • 1 cup chicken stock or vegetable stock (water can also be used)
  • 1 teaspoon butter
  • 1/2 cup basil pesto (store-bought or homemade; fresh, refrigerated basil pesto is recommended!)
  • 2 large lemons divided, plus additional wedges for serving
  • 1 large ripe avocado thinly sliced or chopped
  • 1/3 cup honey-roasted almonds (pre-roasted for salads are ideal)

  2. Spread all the chopped vegetables onto a very large sheet pan. If the vegetables will overlap, use two sheet pans to avoid steaming. Drizzle with olive oil, then sprinkle with garlic powder, paprika, and season generously with salt and pepper to taste. Use your hands to thoroughly toss the ingredients, ensuring all vegetables are well coated. Roast for 10 minutes, then remove from the oven, stir or flip the vegetables, and return to the oven for another 7–14 minutes, or until they are crisp-tender and lightly caramelized. Cooking time may vary based on vegetable size and your preferred level of crispness.
  3. Once roasted, remove the sheet pan from the oven. Add the drained and dried white beans to the hot vegetables and toss everything together gently to warm the beans through. Squeeze 2 tablespoons of fresh lemon juice over the mixture and adjust seasoning with a bit more salt and pepper (I typically add about 1 teaspoon salt and 1/2 teaspoon pepper, but adjust to your preference). Toss again and set aside.
  4. Meanwhile, prepare the couscous. Add the chicken or vegetable stock to a small pot. Add the butter and bring the mixture to a boil over medium-high heat. Once boiling, immediately remove the pot from the heat. Stir in the Moroccan couscous, then cover the pot tightly with a lid. Let it stand for about 5 minutes, or until all the liquid has been absorbed. Fluff the couscous with a fork. Stir in 1/4 cup of the basil pesto, 1 tablespoon of fresh lemon juice, and about 1/2 teaspoon each of salt and pepper (adjust to your taste).
