  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon minced garlic
  • 1-1/2 cups frozen kale
  • freshly grated Parmesan cheese for serving

Instructions

  1. Heat both packages of frozen veggies in the microwave for 2 minutes. Let them thaw while you proceed with browning the sausage. Once slightly thawed, open the packages, chop any large broccoli florets or potato pieces into bite-sized chunks, and set them aside.
  2. Meanwhile, warm the olive oil in a large, sturdy cast-iron pan (or another heavy-bottomed skillet) over medium-high heat. Add the ground Italian sausage to the hot pan, searing it briefly before crumbling it with a spoon or spatula. Cook the sausage through until it’s evenly browned and no pink remains. Season generously with salt and pepper as it cooks.
  3. Once the sausage is fully browned, carefully drain off any excess grease, leaving approximately 1 tablespoon of rendered fat in the pan for flavor. Add the prepared frozen veggies to the pan with the sausage and sauté for 3–5 minutes, stirring occasionally, until they are thoroughly heated through and slightly tender-crisp.
  4. Next, stir in the frozen kale along with all the dried seasonings (basil, thyme, oregano, paprika, onion powder, garlic powder) and the minced garlic. Continue to cook for another 2–3 minutes, allowing the spices to become fragrant and the kale to wilt down.
