  • 1-1/2 teaspoons paprika

  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon granulated sugar
  • 3/4 teaspoon ground turmeric
  • 1/4 teaspoon crushed red pepper flakes optional

  • 1 (14.5-ounce) can fire-roasted crushed tomatoes

Instructions

  • Begin by preparing your lentils: measure them out, then carefully pick through to remove any small debris or shriveled lentils. Transfer the cleaned lentils to a fine-mesh sieve, rinse them thoroughly under cool running water, and set aside to drain. Next, prepare your vegetables with precision. Finely dice the red onion. For the carrots, slice large ones in half lengthwise before thinly slicing them (creating half-moon shapes just under 1/2-inch thick). Dice your potatoes (Yukon gold don’t need peeling, just a good wash) into uniform 1/2-inch pieces. The goal is small, even cuts for both carrots and potatoes to ensure they cook perfectly alongside the lentils. Finally, finely mince the garlic cloves and fresh ginger.
  • Measure the coconut oil (or butter) in its solid state, then melt it in a large cast-iron pot over medium-high heat. Add the diced onion, thinly sliced carrots, and diced potatoes to the pot. Sauté the vegetables for 7–9 minutes, stirring frequently, until they begin to soften and turn a lovely golden hue. Introduce the minced garlic and ginger, continuing to cook for another 1–2 minutes, stirring constantly until fragrant. (Note: Cast-iron pots retain heat exceptionally well, so adjust cooking times if using a different type of pot.) While the vegetables are sautéing, measure out all your spices, preparing them for the next step.
  • Add all the measured spices to the pot with the sautéed vegetables. Season generously with salt and pepper; I typically use about 1 and 1/4 teaspoon of salt and 1/2 teaspoon of pepper. Cook for 1–2 minutes, stirring continuously, until the spices become incredibly fragrant and toasted. Next, pour in the undrained fire-roasted crushed tomatoes, reduce the heat to medium, and stir well. Cook for 2–3 minutes, actively scraping the bottom of the pot to release any flavorful browned bits that may have accumulated, ensuring they integrate into the soup.
  • Vigorously shake the can of full-fat coconut milk before opening. Remove 1/4 cup of the coconut milk and set it aside for later use as a topping. Add the vegetable stock, rinsed red lentils, and the remaining coconut milk to the pot. Bring the mixture to a boil, then reduce the heat to low and gently simmer, uncovered, for 15–20 minutes, or until both the lentils and vegetables are tender. Stir occasionally to prevent sticking. Be mindful that red lentils can quickly become mushy if overcooked, so start checking for tenderness around the 15-minute mark. If the soup thickens too much for your liking, add a splash more broth or stock (I enjoy a thick soup!). If it’s too thin or the lentils aren’t tender enough, slightly increase the heat to encourage a more vigorous simmer.
  • Once the lentils and vegetables are tender, remove the pot from the heat. Stir in the frozen sweet peas, and if desired, add 1/3 cup of finely chopped fresh cilantro. Incorporate the zest and juice of one fresh lemon. Now is the crucial moment to taste and adjust the seasonings. The flavors should be vibrant and harmonious; add extra salt, pepper, or lemon juice as needed to make the soup truly sing.
