Instructions

  • Heads-up: you’ll need to save pasta water before draining! Bring a large pot of water to a boil. Once boiling, add 1 tablespoon salt. Add all the penne pasta and boil, stirring occasionally, until it’s “al dente” according to package directions (use the lowest time indicated). Before draining, remove and reserve 1 cup of pasta water. Drain the pasta but do not rinse it in cold water.
  • Place a large, cast-iron pan or heavy-bottomed pot (one that’s big enough to hold all the pasta later) over medium-high heat. Drizzle in 1 tablespoon of olive oil. Once the oil is hot, add the sliced sausage. Let it sear, stirring occasionally, until it’s nicely browned on all sides (smoked sausage is already cooked through, so you’re aiming for browning and flavor development). Use a slotted spoon to transfer the cooked sausage to a large bowl, leaving the rendered grease behind. If there is more than 1 tablespoon of grease, carefully drain off the excess. Set the sausage aside and cover it with foil to keep warm.
  • In the same pot (do not wipe it out, as the browned bits add flavor), add the unsalted butter and melt it over medium-high heat. Once melted, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, Cajun seasoning, paprika, oregano, and black pepper to taste (I typically add 1/4 teaspoon of pepper). As soon as the mixture comes to a gentle boil, immediately turn the heat down to medium-low. Dump the drained pasta on top of the sauce, along with 1/2 cup of the reserved pasta water. Return the cooked sausage to the pot, and add any optional fresh parsley. Return the pot to medium heat and toss gently with tongs for about 1 minute until the pasta and sauce emulsify beautifully (meaning the sauce clings nicely to the pasta). Add additional pasta water, a tablespoon at a time, if needed (if the sauce looks too dry or stodgy). Taste the finished dish and add a pinch of salt if needed, keeping in mind that Cajun seasoning often contains salt.
  • Remove the pasta from the heat and serve immediately! Garnish individual plates with fresh parsley and an extra sprinkle of Parmesan cheese if desired. Enjoy!

Note 1: Cajun Seasoning Variation: The potency and salt content of Cajun seasoning can vary significantly between brands. I personally use McCormick’s® Perfect Pinch Cajun or Tony Chachere’s® Original Creole Seasoning (please note, these are not sponsored recommendations). If you prefer, you can also easily make your own Cajun seasoning mix from scratch. Regardless of the brand or whether you make your own, it’s always a good idea to add Cajun seasoning slowly and taste as you go to achieve your preferred flavor and spice level. Many Cajun seasonings are already salted, so I generally do not add extra salt to the sauce itself until the very end, after tasting the finished dish.

Note 2: The Importance of Freshly Grated Parmesan: The quality of your Parmesan cheese makes an enormous difference in the flavor and texture of this recipe. For the best results, do not use canned or pre-shredded/pre-grated Parmesan. These products often contain anti-caking agents that prevent the cheese from melting smoothly, resulting in a clumpy or grainy sauce that won’t emulsify properly. Instead, invest in a block of good-quality Parmesan cheese or, for an truly exceptional flavor, Parmigiano Reggiano. Grate it finely yourself using a box grater or a fine microplane grater. The difference in creaminess and taste is truly remarkable in this dish.

Note 3: Testing Sauce Thickness: To determine if your Alfredo sauce has simmered long enough and reached the perfect consistency, try the “back of a spoon” test. Lift a wooden spoon from the simmering sauce and immediately trace a line across the back of the spoon with your fingertip.
