Note 2: I love using roasted and lightly salted cashews for their rich flavor and convenience in this recipe. Here are the exact cashews I use. If using raw cashews, a quick soak in hot water for 15-20 minutes, then draining, can help them blend even smoother.

Note 3: Measure the coconut oil after it has been melted. You can also successfully substitute melted butter, ghee, vegetable oil, or canola oil for similar results.
