Key Ingredients for Perfect Sheet Pan Sausage and Potatoes

Each component of this dish plays a vital role in achieving its irresistible flavor and texture. Here’s a closer look at the fresh ingredients and pantry staples you’ll need, along with tips for selection and preparation:

  • Potatoes: We recommend baby red potatoes or baby Yukon golds. Halving them allows for quicker cooking and develops those desirable crisp, golden edges. If using larger potatoes, cut them into uniform 1-inch pieces to ensure even cooking alongside the other ingredients.
  • Baby Carrots: These sweet, tender carrots are best kept whole. Roasting them whole helps them retain moisture and allows their natural sugars to caramelize beautifully, adding a subtle sweetness to the dish.
  • Asparagus: To prepare asparagus, simply snap off the tough, woody ends. They naturally break at the point where the tender stalk begins, ensuring you get only the best part. Cut the remaining stalks into 2-inch pieces for optimal roasting.
  • Yellow Onion: Slice the yellow onion thinly, about ¼-inch thick. This ensures it cooks down and softens at the same rate as the other vegetables, distributing its aromatic flavor throughout the pan.
  • Turkey Sausage: Opt for a high-quality skinless smoked sausage. Turkey sausage is a fantastic leaner alternative, but feel free to use your preferred smoked sausage (chicken, pork, or beef). Slice it into ½-inch thick coins to ensure even cooking and beautiful browning. Hillshire Farm Turkey Smoked Sausage is a great option.
  • Minced Garlic: Freshly minced garlic adds an incredible aromatic depth. To prevent it from burning and becoming bitter, we add it halfway through the cooking process, allowing its flavor to meld without overcooking.
  • Seasonings: Our signature spice blend is key! It includes dried basil, thyme, oregano, paprika, and onion powder, perfectly balanced with salt and freshly ground black pepper. Prepare this mix once and divide it for use at different stages of cooking, maximizing flavor infusion.
  • Olive Oil: A good quality olive oil is essential for roasting. It helps coat the vegetables and sausage, ensuring they brown beautifully and become tender while adding a subtle, rich flavor.
  • Freshly Grated Parmesan Cheese: A sprinkle of freshly grated Parmesan cheese right after baking elevates the dish with a salty, nutty finish. The residual heat from the pan will gently melt it, creating a delightful texture.
  • Fresh Parsley (Optional): A garnish of fresh chopped parsley adds a pop of color and a touch of fresh herbaceousness, brightening the overall presentation and taste.

Pro Tip for Perfect Roasting

For vegetables and sausage that are beautifully caramelized and perfectly cooked, always use a large sheet pan. Overcrowding your pan causes ingredients to steam instead of roast, leading to softer, less flavorful results. Ensure there’s plenty of space between your ingredients for optimal browning and a quicker bake time.

Step-by-Step Guide: How To Make One Pan Potatoes & Sausage

Follow these simple instructions to create a delicious and satisfying meal with minimal fuss:

  1. Prepare Your Oven and Pan: Preheat your oven to 400°F (200°C). For the easiest cleanup, line a very large sheet pan (ideally 15×21 inches) with parchment paper.
  2. Season and Initial Roast for Potatoes and Carrots: Halve your baby potatoes or cube larger potatoes into 1-inch pieces. Place them on the prepared sheet pan along with the whole baby carrots. Drizzle with 2 tablespoons of olive oil and half of your prepared seasoning mix. Toss everything together until well coated. Spread them out in a single layer and roast in the preheated oven for 20 minutes. This gives the denser vegetables a head start.
  3. Prepare Remaining Ingredients: While the potatoes and carrots are roasting, prepare the rest of your ingredients. Snap off the tough ends of the asparagus and cut into 2-inch pieces. Thinly slice half of a yellow onion (about ¼-inch thick). Slice the smoked sausage into ½-inch thick coins. Mince your garlic.
  4. Add Remaining Ingredients and Final Roast: Carefully remove the sheet pan from the oven. Using a spatula, push the par-cooked potatoes and carrots to one side of the pan. On the other side, add the chopped asparagus, sliced onion, sausage coins, and minced garlic. Drizzle with the remaining 2 tablespoons of olive oil and sprinkle with the rest of the seasoning mix. Toss these new additions to combine, then gently mix everything on the pan together, ensuring all ingredients are well-distributed and spread out in a single layer.
  5. Bake Until Golden: Return the sheet pan to the oven and roast for another 10-15 minutes, or until the vegetables are tender-crisp and the sausage is beautifully browned. The cooking time may vary slightly depending on your oven and how spaced out your ingredients are.
  6. Garnish and Serve: Once cooked to perfection, remove the pan from the oven. Immediately sprinkle with freshly grated Parmesan cheese, allowing it to melt slightly from the residual heat. Garnish with fresh chopped parsley, if desired, for a final touch of freshness. Serve hot and enjoy!
Sausage, asparagus, onion, and garlic added to the seasoned veggies already in the pan, tossed to coat and roasted until done, then garnished with parsley and parmesan cheese before serving.

Expert Tips for a Flawless One Pan Potatoes and Sausage

Achieving perfectly roasted vegetables and savory sausage on a single pan is simple with these expert tips:

  • Maximize Roasting Surface with a Large Sheet Pan: This is perhaps the most crucial tip! For optimal browning and to prevent your vegetables from steaming, use an extra-large sheet pan (a 15×21 inch sheet pan is ideal). Giving ingredients ample space prevents them from overlapping, ensuring they roast beautifully and develop those delicious caramelized edges. If your pan is too small, use two pans and rotate them halfway through cooking.
  • Evenly Cut Your Vegetables: Consistency is key for even cooking. Ensure all your vegetables, especially the potatoes, are cut into roughly the same size pieces. This guarantees everything becomes tender at the same time. For baby carrots, keeping them whole works well, but if using larger carrots, cut them into similar sizes as your potatoes.
  • Choose the Right Potatoes: Baby red potatoes are robust and hold their shape well, offering a hearty texture. Yukon gold potatoes, on the other hand, provide a buttery flavor and tender interior. Both are excellent choices. Just remember to cut them small enough for even cooking, especially if not using baby varieties.
  • Perfect Your Parmesan Topping: Grate your Parmesan cheese finely. This allows it to melt smoothly and evenly over the warm roasted ingredients, distributing its salty, umami flavor beautifully. Add it immediately after removing the pan from the oven.
  • Don’t Forget Parchment Paper: While optional, lining your sheet pan with parchment paper not only makes cleanup an absolute breeze but also helps prevent sticking, ensuring your roasted goodies lift off the pan easily.
  • Balance Your Flavors: Taste your seasoning blend before adding it to the vegetables. Adjust salt and pepper to your preference. Remember, a well-seasoned dish is a delicious dish!
  • Avoid Overcrowding: Reiterate the importance of space. If you find your pan too full, divide the ingredients between two pans. It’s better to use two pans and get beautifully roasted results than one overcrowded pan that yields soggy vegetables.

Creative Variations and Customizations

One of the best aspects of this One Pan Potatoes and Sausage recipe is its incredible adaptability. Feel free to experiment with different ingredients to suit your taste or what you have on hand:

  • Protein Swaps: Instead of turkey sausage, try chicken sausage, pork sausage, or even plant-based sausage for a vegetarian option. You could also add sliced bell peppers or zucchini with the sausage for extra texture and flavor.
  • Vegetable Medley: Get creative with your veggie choices! Broccoli florets, cauliflower, Brussels sprouts, bell peppers (any color), zucchini, or sweet potatoes would all be delicious additions or substitutions. Adjust roasting times for denser vegetables.
  • Spice It Up: If you love a bit of heat, add a pinch of red pepper flakes to your seasoning mix. For a smoky kick, a dash of smoked paprika can work wonders.
  • Herb Garden Freshness: While dried herbs are convenient, fresh herbs like rosemary, thyme, or oregano can be chopped and added along with the minced garlic for an even more vibrant flavor profile.
  • Cheesy Delights: Beyond Parmesan, consider a sprinkle of crumbled feta, shredded cheddar, or a blend of Italian cheeses for a different cheesy dimension.
  • Citrus Brightness: A squeeze of fresh lemon juice over the finished dish can add a delightful zesty brightness that cuts through the richness.

Storage and Reheating Made Easy

Enjoying Leftovers? Absolutely!

This One Pan Potatoes and Sausage dish makes for fantastic leftovers. Here’s how to store and reheat them:

Store any remaining roasted potatoes and sausage in an airtight container in the refrigerator for up to 3 days. For best results, allow the dish to cool completely before transferring it to the container to prevent condensation.

To reheat, spread the leftovers in a single layer on a baking sheet and warm them in the oven at 350°F (175°C) until thoroughly heated through and slightly crispy again (about 10-15 minutes). For a quicker option, you can also reheat portions in the microwave, though the vegetables may be softer. The oven method is recommended for maintaining texture and crispness.

Frequently Asked Questions (FAQ)

  • Can I use frozen vegetables? Yes, you can. However, frozen vegetables tend to release more moisture, which can make them steam rather than roast. For best results, thaw them first and pat them very dry before adding to the pan. You might also want to increase the initial roasting time slightly.
  • What kind of sausage works best? Pre-cooked smoked sausages work best as they only need to be heated through and browned. Turkey, chicken, or pork smoked sausages are all excellent choices. Avoid raw sausages unless you cook them separately first.
  • How do I prevent my potatoes from being soggy? The key is a large sheet pan and not overcrowding it. Give your potatoes (and other veggies) ample space to breathe so they can roast and get crispy. Also, ensure your oven is fully preheated.
  • Can I make this recipe ahead of time? You can prep some ingredients in advance. Slice the potatoes and carrots and store them in water in the fridge. Chop the onions, asparagus, and sausage. Mix the dry seasonings. This will cut down on day-of prep, but for best texture, roast fresh.
  • Is this meal healthy? Absolutely! It’s packed with lean protein from the turkey sausage (or your chosen sausage) and a wide array of nutrient-rich vegetables. It’s a balanced and wholesome meal.

Equipment

  • Sheet pan (15″ x 10″) 15 x 21-inch, see note 1
  • Parchment paper

Ingredients

  • 1 pound baby red potatoes or baby Yukon gold potatoes
  • 8 ounces baby carrots half of a 16-ounce bag
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Salt and pepper
  • 1/4 cup olive oil divided
  • 8 ounces asparagus 2 cups
  • 1/2 large yellow onion
  • 1 (13-ounce) package skinless smoked sausage I use turkey sausage
  • 1 tablespoon minced garlic
  • 1/3 cup freshly grated Parmesan cheese
  • Fresh parsley optional

Instructions

  • Preheat oven to 400°F. Line a very large sheet pan (15×21-inches) with parchment paper for easier clean-up (optional).
  • Halve the baby red potatoes (or cube if they are larger). If not using baby potatoes, cut potatoes into 1-inch pieces. In a small bowl, mix together all the seasonings: dried basil, thyme, oregano, paprika, onion powder, and salt and pepper (I use a heaping 1/4 teaspoon of salt and pepper). Mix together.
  • Place the halved red potatoes and baby carrots on the sheet pan. Pour 2 tablespoons olive oil and half the seasoning mix on top. Toss to combine and place in the oven for 20 minutes.
  • Meanwhile, prepare asparagus by snapping off the ends and cutting into 2-inch pieces. Measure to get 2 cups asparagus. Thinly slice 1/2 of a yellow onion (1/4-inch thick slices). Cut sausage into 1/2-inch thick coins.
  • Remove potatoes and carrots from the oven, and using a spatula, push them to one side of the pan. On the other side, add the chopped asparagus, sliced onion, sausage, and minced garlic. Add remaining 2 tablespoons olive oil and remaining seasoning mix. Toss to combine, then toss everything together with the potatoes and carrots. Make sure to space out veggies/sausage; if the ingredients overlap, the bake time will be longer, and the veggies will steam instead of roast.
  • Bake another 10–15 minutes or until veggies are roasted to your desired preference. Top the dish with freshly grated Parmesan and fresh parsley as desired. Enjoy immediately.

Recipe Notes

Note 1: Use an extra-large sheet pan. The more space the vegetables and sausage have, the better they roast in the oven. When vegetables overlap on a sheet pan, they end up steaming instead of roasting, which results in softer, somewhat soggy-tasting veggies.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F until warmed through or in the microwave for a quicker option.
