- 2 cups old-fashioned oats
- 2 cups unsweetened shredded coconut
- 3/4 cup almond butter see note 1
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine sea salt see note 2
- 1/2 teaspoon ground cinnamon optional
- 1/3 cup dark chocolate chips
- 1/3 cup dried sweetened blueberries
Instructions
- Add the oats and coconut to a large food processor. Pulse for 30–60 seconds or until fairly ground up.
- Add in the almond butter, honey, vanilla, salt, cinnamon, and dark chocolate chips. Pulse mixture again until ingredients are finely chopped and well incorporated. Finally, add in the blueberries and pulse briefly until they are incorporated into the mixture. If the mixture is too dry and crumbly, add more almond butter or honey, a teaspoon at a time. If it is too wet, add more oats and re-pulse.
