  • 2 (15.25-ounce) cans black beans drained and rinsed
  • 1 (14.5-ounce) can fire-roasted diced tomatoes (Muir Glen recommended)
  • 1 (10-ounce) can red enchilada sauce (see Note 2)
  • 1-1/2 cups frozen corn or 1 can corn, drained
  • 3 tablespoons taco seasoning or 1 packet (1.25 ounces), see Note 3
  • Corn tortillas or flour tortillas
  • Toppings as desired (see Note 4)

Instructions

  1. If your quinoa is not pre-rinsed (check the bag for specification), place it in a fine-mesh sieve and rinse under cool running water for about 30 seconds until the water runs clear.
  2. Generously spray a large 6-quart slow cooker with cooking spray or use a liner. Add the rinsed quinoa, stock (chicken or vegetable), drained and rinsed black beans, undrained fire-roasted diced tomatoes, enchilada sauce, corn, and taco seasoning. Stir all ingredients together thoroughly to combine. Cover and cook on HIGH for 2.5 to 4 hours. The exact cooking time will depend on the heat of your slow cooker (see Note 5 for important cooking details). Once cooked, the quinoa should have “popped” and absorbed most of the liquid.
