  • 1 tablespoon olive oil
  • 1 cup finely diced yellow onion (1 medium onion)
  • 1 cup finely diced carrot (2-3 large carrots)
  • 1 cup finely diced green bell pepper (1 large green pepper)
  • 1 pound lean ground beef (93/7, or use ground turkey for a leaner option)
  • Salt and black pepper
  • 2 tablespoons tomato paste
  • 2 cups diced baby gold potatoes (see note 1)
  • 1 tablespoon finely diced jalapeño (adjust to taste, remove seeds for less heat)
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1 teaspoon beef bouillon powder
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons ground coriander
  • 1-1/2 teaspoons paprika
  • 1 (14.5-ounce) can fire-roasted crushed tomatoes (or diced tomatoes)
  • 1 cup chicken broth
  • 1 bay leaf
  • Serving suggestions (see note 2)

Instructions

  • Heat a large pan or skillet over medium-high heat. Add olive oil, finely diced onion, carrot, green bell pepper, and a small pinch of salt and pepper. Sauté, stirring often, until the vegetables begin to soften and become fragrant, about 8 minutes. Push the softened vegetables to the sides of the pan and add the lean ground beef to the center. Season the beef with 1 teaspoon of salt and 1/2 teaspoon of pepper. Cook, breaking up the meat with a spoon, until it is mostly browned.
  • Incorporate the tomato paste, diced potatoes, finely diced jalapeño, minced garlic, and all the dry seasonings (oregano, beef bouillon powder, cumin, coriander, and paprika) into the pan with the beef and vegetables. Continue to cook over medium heat, stirring frequently, for another 5 minutes to allow the flavors to bloom.
  • Lower the heat to low. Pour in the undrained fire-roasted crushed tomatoes and chicken broth, then add the bay leaf to the mixture. Use a spoon to scrape the bottom of the pan to release any browned bits, which adds extra flavor to the sauce. Press the diced potatoes gently under the liquid. Cover the pan with a lid and let it simmer for 10 minutes, allowing the potatoes to begin softening.
  • After 10 minutes, remove the lid, stir the Picadillo, and increase the heat back to medium. Continue to cook uncovered for another 10 minutes, or until the potatoes are fork-tender and most of the liquid has been absorbed, creating a rich, thick sauce (see note 3). Remove and discard the bay leaf. Taste the Picadillo and adjust the seasoning if needed, adding more salt, pepper, or spices to your preference.
  • Serve the Mexican Picadillo hot. It pairs perfectly with warm flour tortillas and/or your favorite rice. For an added burst of freshness, garnish with lime wedges and fresh cilantro if desired. Enjoy your flavorful and hearty meal!
