Season generously with salt and pepper to taste (I typically start with 1 teaspoon of salt and 1/2 teaspoon of pepper). Stir all ingredients to combine thoroughly. Cover and cook on high for 3–5 hours or on low for 5–7 hours, or until the chicken is fully cooked through and shreds easily with two forks.
  3. Instant Pot Method: Prepare the chicken as described for the slow cooker. Add the chicken, chicken stock, salsa verde, black beans, corn, ground cumin, chili powder, paprika, onion powder, and optional minced garlic to the Instant Pot. Season with salt and pepper.
