  • 1/4 cup coconut oil
  • 1-1/4 cups thinly sliced shallots
  • 1-1/2 teaspoons minced garlic
  • 6 cups chicken stock or vegetable stock (see Note 1)
  • 6 ears fresh sweet corn (see Note 2)
  • Salt and pepper, to taste
  • 3 tablespoons fresh basil, finely chopped
  • Red pepper flakes (optional, for heat)

Instructions

  1. Remove the husks and silk from all 6 ears of corn. Carefully cut the corn kernels off five of the cobs, reserving the kernels. Keep all six bare cobs (including the one you just cut, and one whole ear you have yet to cut); these will be used to enhance the stock. Thinly slice the shallots.
  2. In a large pot (one spacious enough to accommodate the corn cobs), heat the coconut oil over medium heat. Once melted, add the thinly sliced shallots and cook, stirring frequently, for about 10 minutes, until they have softened and begun to lightly caramelize. This slow caramelization is key for deep flavor. Add the minced garlic and sauté for another 30 seconds until fragrant.
  3. Add the reserved corn kernels, salt, and pepper to taste (a good starting point is 1-1/4 tsp salt and 1/2 tsp pepper). Place all five bare corn cobs and the one remaining whole ear of corn into the pot. Pour in the chicken or vegetable stock, ensuring the cobs are submerged. Bring the soup to a rolling boil, then reduce the heat to medium-low and simmer, uncovered, for 10 minutes. After 10 minutes, remove the whole ear of corn and set it aside to cool.
  4. Continue to cook the soup with the five bare cobs for another 10 minutes. Then, remove and discard the bare cobs. Allow the soup to cool slightly (if it’s too hot, it can create dangerous pressure in a blender). Carefully transfer the soup in batches to a powerful blender (do not overfill). Blend until the soup is exceptionally smooth; this may take several minutes, especially with a less powerful blender. If desired, or if your blender struggles, you can pass the soup through a fine-mesh strainer back into the pot to ensure ultimate smoothness.
  5. While the soup is blending or cooling, cut the corn kernels from the cooled, reserved whole ear of corn. Once blended, return the smooth soup to the pot. Stir in the freshly cut corn kernels and the finely chopped fresh basil. Taste and adjust seasonings, adding more salt or pepper as needed.
