  • 1/2 cup sliced roasted almonds
  • 9 cups spring mix lettuce blend 8 ounces; I use a 50/50 blend spinach and spring mix leaves
  • Crumbled goat cheese or feta cheese, optional
Lemon Balsamic Dressing
  • 1 large lemon
  • 1/4 teaspoon onion powder
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon minced garlic
  • 1/2 cup olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the chopped sweet potatoes on a large sheet pan. Drizzle them generously with olive oil, then season with salt and pepper (I typically use 1/2 tsp salt & 1/4 tsp pepper).   2. Roast the sweet potatoes for 10 minutes, then carefully flip them. Continue roasting for another 10 minutes, flip again, and then roast for an additional 10-15 minutes, or until they are perfectly crisp-tender and lightly caramelized. Once roasted, remove from the oven and set aside to cool to room temperature.
  3. Prepare the wild rice according to the package directions. If you prefer a homemade method, please refer to Note 1 below for detailed instructions. Once the rice is tender and cooked through, refrigerate it until it’s completely cool. This crucial step prevents the warm rice from wilting your delicate lettuce greens when assembling the salad.
  4. To make the lemon balsamic dressing, zest the large lemon to obtain 1/2 teaspoon of zest, then juice it for approximately 2-1/2 tablespoons of fresh lemon juice. Combine the lemon zest and juice in a small blender or food processor with the remaining dressing ingredients: onion powder, balsamic vinegar, Dijon-style mustard, minced garlic, and olive oil.
