  • 2 pounds chuck roast
  • Salt and pepper — 1 tsp each
  • 2 tablespoons vegetable oil, for searing
  • 4 bay leaves (fresh or dried)
Barbacoa Sauce
  • 2 tablespoons chipotle chiles and adobo sauce (about 1 pepper + sauce)
  • 3/4 cup beef broth
  • 1/3 cup apple cider vinegar
  • 4 tablespoons lime juice
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon chili powder
  • 2 teaspoons coriander
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1/2 teaspoon allspice

Instructions

  • Cut the roast into about 10 even pieces, leaving the fat intact for flavor. Pat dry and season all over with salt and pepper.
  • Heat oil in a large skillet or pot over high heat. Sear the beef in batches without overcrowding, browning on all sides until deeply caramelized. Transfer to the slow cooker.
  • Add all sauce ingredients to a blender and blend until smooth, about 1 minute.
  • Pour the sauce over the seared beef and add bay leaves. Turn the pieces to coat and submerge as much as possible.
  • Cover and cook on low for about 8 hours, until the beef is very tender and shreds easily.
  • Transfer the beef to a bowl and shred with two forks, discarding any large pieces of fat. Spoon some cooking liquid back over the meat to keep it juicy. Taste and adjust salt if necessary.
