Chicken, But Make It Exciting!
I cook chicken often because it’s affordable, versatile, and everyone at my table usually loves it. To keep things interesting, I experiment with simple marinades, different serving ideas, and bright sauces.
This Lemon Garlic Chicken Marinade is one of my favorites — uncomplicated but full of fresh, lively flavor. It’s a great way to transform plain chicken into something memorable.
Use it as a base for sandwiches or bowls, tuck the grilled chicken into warm pita with a dollop of tzatziki, or serve it alongside a hearty Greek salad for an easy, satisfying meal.

Lemon Garlic Chicken Marinade Ingredients
| Ingredient | Notes |
|---|---|
| Chicken breasts or thighs | Thighs stay juicier and are more forgiving. If using breasts, slice and pound them to an even thickness for even cooking. |
| Lemons & honey | Use freshly squeezed lemon juice for bright, clean flavor; honey balances the acidity. |
| Garlic | Freshly minced or grated garlic gives the best flavor. Adjust the amount to taste. |
| Oregano, salt & pepper | Dried oregano adds Mediterranean flavor. Whisk seasonings into the marinade so every bite is seasoned. |
| Olive oil | Good olive oil adds flavor and helps keep the chicken tender while grilling. |

How To Make Lemon Garlic Chicken Marinade
- Prep the chicken: Slice breasts in half horizontally to make thinner cutlets, then cover and gently pound to an even thickness. Pat dry and place in a resealable bag.
- Make the marinade: Whisk together honey, oregano, minced garlic, 1/4 cup fresh lemon juice, olive oil, salt, and pepper. Pour over the chicken, seal the bag, and massage to coat.
- Marinate: Refrigerate for 20–30 minutes, up to 1 hour. Avoid longer marinating times because the lemon juice can begin to change the texture of the chicken.
- Grill: Preheat the grill to medium (about 400°F). Remove chicken from the marinade and discard any excess. Clean and oil the grates, then grill 4–5 minutes per side, or until the internal temperature reaches 160°F; carryover heat will bring it to 165°F while resting.
- Serve: Let the chicken rest 5 minutes, then serve with warm pita, tzatziki, Greek salad, and lemon wedges if you like.
Chelsea’s Tips
Quick Tips For Success
- Even thickness: Slicing or pounding the chicken ensures it cooks evenly.
- Serve over seasoned grains: Try rice or a simple pilaf to make it a full meal.
- Don’t over-marinate: Keep the time under 1 hour to prevent the lemon from “cooking” the chicken.
- Rest before serving: Allow 5 minutes of rest so the juices redistribute and the chicken stays moist.
Quick Tip
Use a thermometer: Remove the chicken at 160°F; it will reach 165°F while resting.
Storage
Enjoy this chicken fresh from the grill. Store leftovers in an airtight container in the refrigerator for 3–4 days.
