  • 1 tablespoon olive oil
  • 1 pound lean ground beef 93/7
  • 1 tablespoon paprika
  • 1-1/2 teaspoons garlic powder
  • 1-1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon pepper
  • 28 ounces crushed tomatoes
  • 2-1/2 cups chicken broth
  • 2 cups elbow pasta 9 ounces
  • 2 cups freshly shredded sharp Cheddar cheese 6.6 ounces
  • finely chopped cilantro optional

Instructions

  • In a large pot, heat the oil over high heat. Add the ground beef and sear briefly, about 1 minute per side. Break it apart and cook until browned throughout.
  • Add the remaining ingredients except for the cheese and cilantro. Stir, bring to a simmer, then reduce heat to medium and cover.
  • Cook covered for 10–12 minutes, stirring a few times, until the pasta is al dente. The sauce may still be a bit thin; it will thicken as it rests.
  • Turn off the heat. Gradually stir in the shredded cheese, a handful at a time, until fully melted and incorporated. Taste and adjust seasoning if needed.
  • Garnish with chopped cilantro if desired and serve immediately.

Note 1: Adjust salt based on your broth. Start small, taste, and add more if needed. With low-sodium broth, you may want an extra 1/4 teaspoon of salt.
