- 1 pound boneless, skinless chicken thighs 3–4 thighs, see note 1
- 4 teaspoons olive oil
- 2 teaspoons balsamic vinegar
- Salt and pepper (about 1 tsp salt & 1/2 tsp pepper)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 3/4 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried dill optional
- 1 large lemon cut into wedges

Preheat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil for easy cleanup. Pat the chicken thighs dry with paper towels. There’s no need to trim excess fat; it will render as the chicken cooks.

In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, garlic powder, onion powder, paprika, oregano, basil, and dill (if using). Rub or brush the mixture over both sides of each thigh until evenly coated.

Arrange the thighs flat on the prepared sheet pan, spacing them so air can circulate. Bake in the center of the oven for 15 minutes.

Move the rack about 8 inches from the heat source and switch the oven to broil. Broil for 7–10 minutes, watching closely, until the tops are browned, lightly charred, and caramelized.

Remove from the oven and spoon pan juices over the chicken. Squeeze fresh lemon juice over the thighs to brighten the flavors. Slice or chop as desired and serve with lemon wedges.
