A Smash Taco Remix My Whole Family Loves

Smash burgers and smash burger tacos are staples at my house because they’re quick, full of flavor, and reliably popular with everyone. I love experimenting with that same smashed technique, which is why I turned my favorite Caesar salad into tacos. My oldest son loves Caesar salad, so I figured these would be a hit — and they exceeded my expectations. These tacos now earn a regular spot in our rotation.

While you can make the Caesar dressing and salad from scratch for maximum flavor, a good Caesar salad kit makes this dish faster and still delicious. That convenience is perfect for those busy weeknights when you want a fresh, satisfying dinner without too much fuss.

Tacos
  • 1 pound ground chicken (ground thighs if available)
  • 1 tablespoon roasted chicken base or similar chicken seasoning
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste (add salt only if needed)
  • Tiny pinch red pepper flakes (optional)
  • 6 flour tortillas, fajita-size
  • 1–2 tablespoons vegetable oil, if needed (for stainless steel pans)
Caesar Salad
  • 1 batch prepared Caesar salad with dressing (or use a Caesar salad kit)
  • Freshly grated Parmesan cheese for topping
  • 1 large lemon, cut into wedges (optional, for serving)

Instructions

  • Prepare the Caesar salad ingredients first. If making the dressing from scratch, make it and chill so the flavors meld. Chop, wash, and thoroughly dry the lettuce. Crush the croutons lightly. Do not toss the salad with dressing yet; wait until you are ready to serve.
  • Heat the cooking surface: preheat an electric griddle to 400°F or heat a cast-iron skillet over medium-high heat until very hot.
  • Season the chicken: in a medium bowl, combine ground chicken, roasted chicken base, Italian seasoning, black pepper, and red pepper flakes if using. Mix gently until just combined; avoid overworking the meat.
  • Form the tacos: divide the chicken mixture into six equal portions. Press one portion into a very thin, even layer over one side of each tortilla, spreading to the edges.
  • Cook the chicken side: lightly oil the griddle or skillet if needed. Place the tortillas chicken-side down on the hot surface. Press each one firmly with a burger press or the bottom of a saucepan for about 5 seconds to ensure contact. Cook 3–4 minutes, or until the chicken is deeply browned and reaches 160°F.
  • Finish the tortillas: cook an additional 30–60 seconds, or until the tortilla is lightly golden and crisp. Taste and add a small pinch of salt if needed. As each taco finishes, fold it gently into shape so it holds the salad. Cook in batches to prevent overcrowding.
  • Finish the salad: toss only the amount of lettuce you plan to serve immediately with Caesar dressing, Parmesan, and crushed croutons. Keep any leftovers undressed so they stay fresh.
  • Assemble and serve: top each taco with a generous pile of dressed Caesar salad and grate extra Parmesan over the top. Finish with freshly cracked black pepper and serve with lemon wedges and extra Caesar dressing for dipping.
