I Asked a Restaurant Chef for His Queso Secret and WOW!

If your family has a favorite dip, you know how picky people can be. My brother-in-law swore no homemade queso could beat his go-to restaurant, so I turned it into a challenge. After testing variations and even asking the restaurant what they did, the secret proved simple: white American cheese, a few aromatics, and evaporated milk.

He tried this version and declared, “This is it.” It’s fast to make, stays silky, and is irresistible with tortilla chips.

How To Make Queso Dip

  1. Cook aromatics: Melt butter in a medium pot, add sliced green onions and cook until soft, then add garlic and cook 30 seconds more.
  2. Add flavor: Stir in drained diced green chiles and the spices, cooking until fragrant.
  3. Pour and heat: Shake the can and add evaporated milk. Bring to a light simmer over medium heat, then lower to medium-low. Do not boil.
  4. Melt cheese: Toss chopped or shredded cheese with cornstarch, then add to the pot. Stir constantly on low until completely smooth.
  5. Finish & serve: Taste with a tortilla chip, adjust salt and seasonings, stir in cilantro if using, and serve warm. Keep on warm in a small slow cooker for longer service.

Keep it creamy while serving: Use a small crockpot on the warm setting and stir occasionally. If the queso thickens, reheat gently on low or in short microwave bursts and add a splash of evaporated milk to thin.

Equipment

  • Medium pot

Ingredients

  • 2-1/2 cups (12 ounces) white American cheese, shredded or coarsely chopped
  • 1-1/2 teaspoons cornstarch
  • 1 tablespoon unsalted butter
  • 3/4 cup green onions, whites and light green parts, thinly sliced
  • 2 teaspoons minced garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 (4-ounce) can diced green chiles, drained
  • 1 (12-ounce) can evaporated milk
  • 1/4 cup finely chopped cilantro (optional)
  • Tortilla chips, for dipping

Instructions

  • Shred the cheese or chop if sliced. Measure 2-1/2 cups. Toss the cheese with cornstarch in a small bowl and set aside.
  • Heat a medium pot over medium. Melt butter, add sliced green onions and cook 3–5 minutes until soft. Add garlic and cook 30 seconds.
  • Drain the green chiles well. Add chiles, cumin, onion powder, garlic powder, paprika, and salt and pepper. Cook 1–2 minutes until fragrant.
  • Shake the evaporated milk and pour it into the pot. Stir and bring to a light simmer over medium, then reduce to medium-low. Do not boil.
  • Add the cornstarch-coated cheese and stir constantly on low until the cheese melts and the sauce is smooth. It may look thin at first; it will thicken as it sits. Taste and adjust seasoning, stir in cilantro if using, then remove from heat and serve warm with chips.
  • To keep creamy for longer, transfer to a small Crock-Pot on warm and stir occasionally. If it thickens, reheat gently on low or in short microwave bursts, adding a splash of evaporated milk if needed.

Recipe Notes

Note 1: White American cheese from the deli is recommended for the best melt. If only sliced, ask for the largest slices so you can shred or chunk them. A sharp cheddar can be used as a substitute if needed.

Note 2: Fire-roasted diced green chiles add extra smoky flavor but regular diced green chiles work fine. For more heat, add a hotter can or a diced jalapeño.

Note 3: Evaporated milk reduces the chance of separation and gives the creamiest texture. Do not use sweetened condensed milk.

Storage: Store in an airtight container in the refrigerator for 3–5 days. Reheat gently; this queso does not freeze well.
