Cake Batter Popcorn: The Ultimate Sweet & Crunchy Treat
Prepare yourself for an extraordinary treat that combines two beloved indulgences: fluffy popcorn and nostalgic cake batter flavor. Our Cake Batter Popcorn recipe is a delightful confection, perfectly sweet, irresistibly crunchy, and generously adorned with vibrant sprinkles. Imagine the joy of biting into a perfectly coated kernel, delivering that authentic cake batter taste thanks to a generous toss in melted white chocolate and real cake mix. This isn’t just a snack; it’s a celebration in a bowl, perfect for movie nights, parties, or whenever you crave a unique and utterly delicious sweet escape.

The Sweet Origin: Crafting Cake Batter Popcorn
The inspiration for this unique popcorn creation stems from a truly addictive dessert: cake-batter-flavored ice cream. My family’s absolute favorite treat from Coldstone Creamery® involves this delicious ice cream base, especially when topped with crumbled cookies and rich hot fudge. It might sound unusual at first – I was certainly skeptical when a friend first recommended the combination – but trust me, it’s ridiculously tasty and quickly became a new addiction for us.
After successfully experimenting with a decadent Oreo popcorn recipe, the idea of translating that beloved cake batter flavor into a popcorn form was a natural next step. Now, the ultimate challenge remains: combining both Oreo and Cake Batter Popcorn to see if we can truly rival that iconic ice cream combo! This popcorn is inherently very sweet, much like a generous spoonful of raw cake batter itself, offering a delightful twist on traditional movie theater popcorn or even our popular chocolate popcorn. If you’re a fan of fluffy popcorn and adore anything with a cake batter taste, this recipe is guaranteed to become your new obsession!
Choosing the Perfect Popcorn for Your Cake Batter Creation
The foundation of great Cake Batter Popcorn lies in selecting the right popcorn. While popping your own can be a fun and rewarding experience, we also have a convenient shortcut for those short on time.
- Store-bought popcorn shortcut: Opting for already popped, plain popcorn significantly streamlines this recipe, making it quicker and easier to prepare. While it might be a tad more expensive, the convenience is often worth it. Look for brands like SkinnyPop Original Popcorn, which offers a great, neutral base.
- Popping your own for freshness: If you prefer to pop your own kernels, we recommend using a simple microwave popcorn like Orville Redenbacher’s Naturals Simply Salted Popcorn, or using an air popper or stovetop method. The key is to ensure the popcorn cools completely before you use it in this recipe. Warm popcorn will cause the chocolate to melt unevenly and won’t adhere as well.
- Important note on flavor: Whatever popcorn method you choose, it is crucial to select plain or very lightly salted popcorn. Always check the ingredient list to confirm that only oil and salt are added. Purchasing popcorn that is pre-flavored, heavily buttered, or artificially cheesy will clash with the delicate cake batter flavor and result in an “off” taste. The goal is a neutral canvas for our sweet coating.

Understanding and Safely Preparing Your Cake Mix
The secret ingredient that gives this Cake Batter Popcorn its authentic flavor is, of course, cake mix. However, it’s essential to address a crucial safety aspect: raw flour. Typically, when baking, the high temperatures involved kill any potential bacteria that might be present in raw flour. Since this popcorn recipe isn’t baked, it contains “raw” flour, which carries a small risk of foodborne illness (like E. coli). For your peace of mind and safety, we strongly recommend heat treating your cake mix before incorporating it into the recipe.
Heat treating is a simple process that ensures any potential bacteria are eliminated without altering the cake mix’s flavor or texture. There are two convenient methods for heat treating your mix:
- Microwave Method:
- Add the desired amount of cake mix to a microwave-safe bowl.
- Microwave on high in short bursts of 30 seconds. After each burst, stir the cake mix thoroughly to ensure even heating and prevent burning.
- Continue this process until the mixture reaches an internal temperature of 165°F (74°C) throughout. Use a reliable food thermometer to check the temperature in several spots. If it’s below 165°F, return it for another 30-second burst.
- Oven Method:
- Preheat your oven to 300°F (150°C).
- Line a large sheet pan with sides (a 15×21-inch pan works well) with a nonstick liner or parchment paper.
- Spread the cake mix evenly in a thin layer on the prepared pan.
- Bake, removing and stirring the mix every 1 to 1 1/2 minutes.
- Each time you stir, use your thermometer to check the temperature. As soon as it consistently reads 165°F (74°C), it is safe to use.
Important Post-Treatment Steps:
- After heat treating, allow the cake mix to cool completely before using it in the recipe. To speed up this process, you can place the pan with the cake mix in the refrigerator or freezer until it reaches room temperature.
- Inspect the mix for any discolored sections; these indicate burning and should be discarded, as they will impart an unpleasant taste to your popcorn. Break up any clumps to ensure a smooth coating. The heat-treated cake mix should look exactly as it did before treatment – its appearance should not change at all.
Quick Tip: Selecting Your Cake Mix
Our go-to cake mix for this delightful recipe is Betty Crocker® Super Moist Rainbow Chip cake mix (not sponsored). Its vibrant flecks add a fun visual element. We’ve also achieved fantastic results with Funfetti® (by Pillsbury) cake mix, which brings a similar festive touch and delicious vanilla-cake flavor. Feel free to experiment with other vanilla or yellow cake mixes for different subtle undertones!

Mastering the Melt: White Chocolate Tips for Perfect Cake Batter Popcorn
The melted white chocolate is the binding agent and a key flavor component for our Cake Batter Popcorn. Achieving a smooth, perfectly melted consistency is crucial for an even coating and delicious result. Here are our top tips for melting chocolate like a pro:
- Prioritize High-Quality Chocolate: The quality of your white chocolate chips directly impacts the melt consistency and overall taste. We highly recommend using premium brands like Ghirardelli® or Guittard® (not sponsored). These brands offer a superior melt, producing a wonderfully smooth and rich coating. Cheaper brands of white chocolate often contain more vegetable fats and less cocoa butter, making them resistant to melting smoothly and prone to a waxy, less flavorful finish. Avoid using almond bark, which is an artificial chocolate made primarily with vegetable fats instead of real cocoa butter, leading to a significantly less flavorful outcome.
- Choose the Right Tools: Always microwave your chocolate chips in sturdy, heat-safe bowls made of glass or ceramic. Plastic or melamine bowls can retain heat unevenly, sometimes leading to scorched spots or imparting unwanted flavors.
- Slow and Steady Wins the Race: To prevent burning or seizing, microwave your chocolate chips in short, controlled bursts. Heat them for 30 seconds at a time, then remove the bowl and stir for a solid 20-25 seconds between each microwave interval. Remember, chocolate continues to melt even after it’s removed from the microwave due to residual heat, so constant stirring helps distribute this heat and achieve a silky smooth texture.
Quick Tip: Avoiding Chocolate Mishaps
Melting chocolate requires patience and care. Even a tiny drop of water introduced into melting chocolate can cause it to “seize” – turning it hard and grainy, rendering it unusable. Similarly, overheating chocolate can cause it to become cloudy, thick, and sticky, or even burn, resulting in a bitter taste. The best way to prevent these common mishaps and ensure beautifully melted chocolate is to proceed slowly and gradually, allowing the heat to distribute evenly while stirring frequently.

Cake Batter Popcorn Storage Best Practices
While incredibly delicious, popcorn has a tendency to go stale quickly, especially when coated with chocolate and cake mix. Proper storage is key to maintaining its delightful crunch and flavor.
- Airtight is Essential: To maximize freshness, transfer any leftover Cake Batter Popcorn into a large zip-top plastic bag or an airtight container. Press out as much air as possible from the bag before sealing.
- Cool, Dry, and Dark Conditions: Store the sealed popcorn in a dry, cool, and dark area of your pantry or kitchen. It’s crucial to keep it away from direct heat or sunlight, as these conditions can cause the chocolate coating to melt and become messy.
- Enjoy Promptly for Best Texture: This Cake Batter Popcorn is best enjoyed within 1-3 days of preparation. Even with proper storage, the moisture from the cake mix and chocolate coating will gradually begin to soften the popcorn, diminishing its signature crunch.
- Freezing Not Recommended: We do not recommend freezing leftovers. Upon thawing, the popcorn tends to become soft and lose its desirable texture. If you’re concerned about finishing an entire batch, consider cutting the recipe in half or thirds to make a smaller, fresher portion.
Quick Tip: Say Goodbye to Unpopped Kernels
There’s nothing worse than biting into a delicious piece of Cake Batter Popcorn only to crunch down on a hard, unpopped kernel! Here’s a simple trick to ensure your sweet snack is kernel-free: Lay one or two wire cooling racks over a large baking tray or another large sheet pan. Carefully pour your freshly popped popcorn over the cooling rack(s). All the small, unpopped kernels will fall through the holes onto the tray below. Once you’ve scooped up the fluffy, perfectly popped corn and measured it for this recipe, you can easily discard the unwanted kernels from the tray. This quick step guarantees a truly enjoyable, kernel-free snacking experience!

Cake Batter Popcorn
Equipment
-
Large sheet pan (15″ x 21″) 15 x 21-inch, lined
-
Large bowl
Ingredients
- 12 cups popped popcorn plain or lightly salted, see note 1
- 2-1/2 cups white chocolate chips see note 2
- 1 teaspoon vegetable oil
- 1/4 teaspoon salt
- 1/2 cup Rainbow Chip Cake Mix or Funfetti, see note 3
- 1/3 cup sprinkles
Instructions
-
Line an extra-large sheet pan with parchment paper or wax paper. Set aside a very large bowl. The larger the bowl, the easier it is to toss. Pop the popcorn. Refer to note 3 to heat treat the cake mix.
-
Lay a wire cooling rack on top of a large tray. Carefully pour the popped popcorn over the cooling rack. All the un-popped kernels will fall through the holes onto the tray. Once you’ve scooped up the popcorn and measured 12 cups for this recipe, you can discard the kernels. Add the measured popcorn to the large bowl. Double-check to ensure there are no stray kernels in the bowl.
-
Melt white chocolate chips and vegetable oil in a microwave-safe bowl in bursts of 30 seconds, stirring between each burst for 15 seconds, until the chocolate is completely melted and smooth. Mix in the heat-treated cake mix and add salt if your popcorn was unsalted. Stir until well combined. Pour this mixture over the popcorn, using a spatula to scrape every bit of the melted chocolate onto the popcorn. Working quickly, toss the popcorn until every kernel is well coated. Pour in the sprinkles and toss gently until they are evenly integrated into the popcorn.
-
Pour the coated popcorn onto the prepared sheet pan and use a spatula to spread it into an even layer. Let it harden at room temperature or in the fridge, then break apart and enjoy your delicious Cake Batter Popcorn!
Recipe Notes
Note 2: My favorite chocolate chips are Ghirardelli® or Guittard® (not sponsored). Microwave the chocolate chips in sturdy, heat-safe bowls (instead of plastic or melamine). Going slow is the best way to prevent ruined chocolate!
Note 3: If you are concerned about the raw flour in the cake mix, I recommend heat treating it first. Heat treat the entire mix and measure after it has cooled. Heat treatment should not change the appearance of the mix; if it is discolored, it’s likely burnt and unusable. You can treat your mix in the oven or microwave:
- Microwave the cake mix in a microwave-safe bowl on high in 30-second bursts, stirring well between each burst to prevent burning. Use a thermometer to check the mixture in several spots to ensure it reaches 165°F throughout.
- Preheat oven to 300°F and line a large, rimmed sheet pan with a nonstick liner or parchment paper. Spread the cake mix evenly on the pan and bake, stirring every 1-1/2 minutes. Use a thermometer to check the temperature each time you stir; once it reaches 165°F, it’s safe to use in the recipe.
Storage: Store Cake Batter Popcorn in an airtight bag in a cool, dry place, away from heat and sunlight. Enjoy within 1–3 days before the cake mix softens the popcorn. Freezing isn’t recommended, so make a smaller batch if needed.
