This particular **Shrimp and Sausage Recipe** stands out as an all-time favorite in our kitchen, and for good reason! It skillfully merges the delicate sweetness of perfectly cooked shrimp with the smoky, robust flavor of sausage, all nestled among tender-crisp vegetables.

While classic, time-intensive dishes like a hearty shrimp and sausage gumbo or a traditional jambalaya have their place, sometimes life calls for a quicker, more straightforward approach. That’s precisely where this one-pan marvel excels. It delivers all the comforting, savory flavors you crave, but in a fraction of the time and with significantly less fuss. This recipe is a testament to the fact that incredibly delicious and healthy meals don’t have to be complicated.

Speaking of jambalaya, if you’re looking for a quick and easy take on those iconic flavors, you absolutely must try our One Pan Jambalaya. While it offers a simplified version rather than an authentic, slow-cooked rendition, it captures the essence with shrimp, sausage, rice, and vegetables, all seasoned beautifully and cooked on one sheet pan. In fact, that very recipe served as the inspiration for developing this incredibly simple, yet profoundly satisfying, dedicated Shrimp and Sausage Recipe!

The Secret to Flavor: Our Versatile Seasoning Blend

The heart of this extraordinary **Shrimp and Sausage Recipe** lies in its incredibly aromatic and adaptable seasoning blend. While your oven preheats, you’ll whip together a simple yet powerful mixture that serves three crucial roles in building the dish’s flavor layers. This outstanding blend is crafted from a thoughtful combination of dried herbs, vibrant spices, and a duo of fats: butter and olive oil. This strategic choice of **butter** and **olive oil** isn’t accidental; it offers the best of both worlds. The butter contributes a rich, nutty depth and aids in achieving beautiful caramelization and a golden-brown finish on the shrimp and vegetables. Meanwhile, the olive oil ensures even roasting, promoting a delicate crispness and infusing everything with its subtle, fruity notes, enhancing overall flavor development.

To this foundational fat blend, we add a medley of classic seasonings: fragrant **dried parsley** and **dried oregano** for their earthy, herbaceous undertones, a generous dash of **paprika** for its warm color and mild peppery sweetness, and **garlic powder** to impart that essential savory kick without the raw bite of fresh garlic during roasting. Of course, a good pinch of **salt and pepper** is fundamental to enhance all these incredible flavors.

For those who appreciate a touch of warmth and excitement, we highly recommend incorporating a hint of **cayenne pepper**. Even a small amount adds a wonderful depth and a pleasant, gentle heat that elevates the entire dish. However, if you prefer a milder flavor profile, feel free to omit or reduce the cayenne to your liking. Conversely, if you’re a heat enthusiast craving an extra fiery kick, don’t hesitate to increase the amount. This seasoning blend is designed to be flexible, allowing you to tailor the spice level to your personal preference, ensuring this sheet pan shrimp and sausage recipe perfectly suits your palate.

So, one perfect blend, three strategic uses in this exceptional shrimp and sausage dish. Let’s break down how we maximize its potential:

  1. First, a portion is vigorously tossed with the **potatoes** before they begin their initial roast, ensuring they absorb maximum flavor and achieve a crispy exterior.
  2. Next, a generous amount is reserved to delicately **marinate the shrimp**, allowing them to soak up the aromatic spices, resulting in plump, flavorful bites.
  3. Finally, the remaining blend is mixed with the **sausage and additional veggies**, guaranteeing that every single component of your meal is coated in a delicious, cohesive flavor.

Expert Tips for a Perfect Shrimp and Sausage Sheet Pan

Achieving culinary perfection with this **One-Pan Shrimp and Sausage Recipe** is surprisingly simple, especially when you keep a few key tips in mind. Paying attention to these details will ensure every element of your dish cooks beautifully, yielding maximum flavor and texture.

  • Choosing Your Sausage: The type of sausage you select significantly impacts the overall flavor profile. For this recipe, it is crucial to use **smoked sausage** – never raw. Smoked varieties, such as kielbasa, Andouille, or even healthier options like smoked turkey or chicken sausage, are already cooked and lend a deep, savory, and often spicy flavor that raw sausage cannot replicate in this short cooking time. Smoked turkey or chicken sausage are excellent choices for a leaner meal, offering fewer calories and less saturated fat while still delivering fantastic taste. We particularly enjoy hardwood smoked turkey sausage for its rich flavor without being overly heavy.

  • Selecting and Preparing Shrimp: While fresh shrimp always offers the best texture and flavor, high-quality frozen shrimp works wonderfully if properly thawed. If using frozen, ensure it is completely thawed under cold running water and, most importantly, **pat it thoroughly dry with paper towels** before adding it to the seasoning. Excess moisture can prevent browning and dilute the flavors. For the best results in a sheet pan meal, opt for large or extra-large shrimp (often labeled as 26/30 count per pound). Smaller shrimp tend to cook much faster and can easily become overcooked and rubbery. To save time and effort, purchase shrimp that are already shelled, peeled, and deveined. Remember, shrimp cooks very quickly – typically only requiring about 6-7 minutes in the oven – so keep a close eye on it to prevent overcooking.

  • Vegetable Preparation for Even Roasting: The key to beautifully roasted vegetables is uniform size. Cut all your vegetables, especially the potatoes, onions, and bell peppers, into **roughly equal sizes** and according to the recipe’s specifications (e.g., 1-inch pieces for potatoes, 1/2-inch for onions). This meticulous preparation ensures that all vegetables roast evenly, reaching that perfect tender-crisp texture and desirable caramelization at the same time. Unevenly cut vegetables will lead to some pieces being undercooked and others becoming mushy or burnt, detracting from the overall quality of your dish.

Quick Tip: Understanding Shrimp Sizing

When purchasing shrimp, you’ll often see numbers like “26/30” or “U15” on the packaging. This designation refers to the count of shrimp per pound. For example, “26/30” means there are 26 to 30 shrimp in one pound, indicating a medium-large size. “U15” signifies “under 15” shrimp per pound, meaning they are very large. Generally, the fewer shrimp per pound, the larger they are. For this recipe, we recommend a larger size (like 26/30 or even U15) to prevent them from overcooking before other ingredients are ready.

Versatile Serving and Recipe Ideas for Shrimp and Sausage

This **One-Pan Shrimp and Sausage Recipe** is incredibly versatile and can be enjoyed in numerous ways, making it a fantastic staple for your meal planning. While delicious straight off the pan, here are some inspiring ideas to elevate your dining experience or adapt the recipe to suit different cravings:

  • Shrimp and Sausage with Rice: A classic pairing! Serve your roasted shrimp and sausage mixture over a bed of fluffy plain rice for a simple, satisfying meal. For an extra layer of flavor, consider serving it with our aromatic herb rice. Alternatively, for an even easier approach, add 1-2 packets of **Ready Rice/Microwaveable Packaged Rice** directly to the sheet pan when you add the corn. Give it a good toss with the other ingredients and roast for just 2 minutes. There’s no need to microwave the rice beforehand; it will heat through and absorb flavors beautifully in the oven, creating a delicious, integrated dish.

  • Creamy Shrimp and Sausage: If you’re in the mood for something rich and decadent, adapt the flavors into a creamy pasta. Try our Creamy Cajun Sausage and Veggie Pasta. To incorporate shrimp, simply sauté it in a separate pan until perfectly pink and tender, then stir it into the creamy pasta dish right before serving. The combination of the smoky sausage and delicate shrimp in a luscious sauce is truly divine.

  • Garlic Shrimp and Sausage Skillet: For a stovetop twist, create a vibrant skillet meal. Prepare our favorite Lemon Garlic Shrimp recipe in a skillet. In a separate pan, sauté your smoked sausage until browned and heated through. Combine the two in the skillet at the end, tossing them together with a squeeze of fresh lemon and a sprinkle of parsley for a quick and flavorful dish.

  • Shrimp and Italian Sausage Recipe: Elevate your pasta night by combining succulent shrimp with robust Italian sausage. Use our Creamy Sausage Pasta recipe as your base, which already features delicious Italian sausage. As with the creamy Cajun option, sauté shrimp separately until cooked, then gently fold them into the creamy pasta sauce at the very end. The blend of spicy Italian sausage and tender shrimp in a creamy sauce is incredibly satisfying and comforting!

Number 1 Tip: Use an Extra-Large Sheet Pan! This might seem like a minor detail, but it’s arguably the most critical factor for achieving perfectly roasted results in this **Shrimp and Sausage Recipe**. The more space your vegetables, shrimp, and sausage have on the pan, the better they will roast. When ingredients are crowded or overlapping, they tend to steam rather than roast, leading to softer, sometimes soggy, textures instead of beautifully caramelized and tender-crisp edges. We highly recommend using a large, 15×21 inch sheet pan to give everything ample room to breathe and brown. If you don’t have one, using two smaller sheet pans will achieve the same fantastic results by preventing overcrowding.

Quick Tip: Crowding Affects Cook Time

If you use a sheet pan that is too small and overcrowd the ingredients, the cooking time will be longer than indicated in the recipe. Adequate space allows the veggies and sausage to develop those coveted beautiful, caramelized edges and cook more efficiently. Always prioritize spreading your ingredients out!

Shrimp and Sausage Recipe

By Chelsea Lords
This one-pan Shrimp and Sausage dish is a favorite! Loaded with veggies, juicy shrimp, smoky sausage, and the perfect seasoning blend—simple and delicious!
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Servings: 4 servings

Equipment

  • Large sheet pan (15″ x 21″) (15 x 21-inch, see note 1 for details on pan size)

Ingredients

  • Cooking spray
  • 1 pound baby red potatoes cut into 1-inch pieces, about 3 cups
  • 4 tablespoons unsalted butter melted
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon seasoned salt
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional, adjust to taste
  • 1 pound extra large shrimp shelled, peeled, and deveined (see note 2)
  • 1 (14-ounce) package smoked sausage coined (see note 3)
  • 1 large yellow onion chopped into 1/2-inch pieces
  • 2 bell peppers chopped into 1-inch pieces; we recommend 1 red, 1 green
  • 1-1/2 cups frozen corn or 1 can, drained
  • Fresh parsley optional, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly coat a large sheet pan with cooking spray. Wash and thoroughly dry the baby red potatoes, then cut them into uniform 1-inch pieces. Add the cut potatoes directly to the prepared sheet pan.
  2. In a small bowl, combine the melted unsalted butter, olive oil, minced garlic, dried parsley, dried oregano, garlic powder, seasoned salt, paprika, and the optional cayenne pepper. Stir or whisk vigorously until all ingredients are completely combined and form a cohesive seasoning paste. Remove 2 tablespoons of this flavorful mixture and toss it with the potatoes on the sheet pan until they are well coated. Spread the seasoned potatoes into a single, even layer on the pan and bake for 15 minutes.
  3. While the potatoes are roasting, prepare the shrimp marinade. Pat the shrimp thoroughly dry with a paper towel; this step is crucial for good browning. Place the dried shrimp in a clean bowl and toss them with 2 and 1/2 tablespoons of the prepared butter-herb mixture. Stir gently to ensure all shrimp are coated, then set aside to marinate.
  4. Prepare the remaining vegetables and sausage. Slice the smoked sausage into 1/2-inch thick coins. Cut the yellow onion into 1/2-inch pieces and the bell peppers into 1-inch pieces. Ensure all canned corn is thoroughly drained, or measure out your frozen corn and let it stand to partially thaw.
  5. After 15 minutes, carefully remove the sheet pan with the potatoes from the oven. Using a spatula, toss the potatoes to ensure even cooking and browning. Gently push the potatoes to one side of the sheet pan, maintaining an even, uncrowded layer. To the empty side of the pan, add the sliced sausage, chopped onion, and bell peppers. Pour the remaining herb-butter mixture over these new additions (use your spatula to scrape out every last bit from the bowl) and toss everything generously to coat. Re-arrange all ingredients on the pan, spreading them out as much as possible to ensure good roasting, and return to the oven for another 15 minutes. Toss everything again with a spatula, then return to the oven for 8 more minutes.
  6. Remove the sheet pan from the oven again. Toss the contents once more, spacing the veggies out to avoid crowding. Add the marinated shrimp to the pan, distributing them evenly. Bake for another 6 minutes, or until the shrimp are fully cooked through (pink and opaque) and the vegetables are crisp-tender. Finally, add the frozen corn on top of the mixture and bake for just 1 more minute to heat through. Toss everything one last time to combine all the delicious flavors.
  7. If desired, garnish generously with fresh chopped parsley for a pop of color and freshness. Serve this delightful One-Pan Shrimp and Sausage immediately and enjoy!

Recipe Notes

Note 1: Sheet Pan Size Matters! For optimal roasting and maximum caramelization on your vegetables, shrimp, and sausage, ample space on the sheet pan is crucial. We highly recommend a 15×21-inch sheet pan. If you don’t have one this large, using two smaller pans will prevent overcrowding. Crowded ingredients will steam instead of roast, leading to longer cooking times and less desirable textures.

Note 2: Shrimp Selection and Preparation. We use extra-large shrimp, typically sized at 26/30 (meaning 26-30 shrimp per pound), for the best results. Always opt for shrimp that are already shelled, peeled, and deveined to save prep time. If using frozen shrimp, thaw them completely according to package directions and pat them very dry with paper towels before marinating. If using frozen, pre-cooked shrimp, thaw them as directed, pat them dry, and add them to the sheet pan along with the corn for the final minute or two of cooking, just to warm them through.

Note 3: Choosing Your Sausage. Any type of smoked sausage will work well in this recipe, but it MUST be smoked (fully cooked). Raw sausage will not cook properly in the time allotted. Our preference is smoked turkey sausage for a lighter option that’s still packed with flavor.

Storage: Store any leftover One-Pan Shrimp and Sausage in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
