A Smash Taco Remix My Whole Family Loves
Smash burgers and smash burger tacos are staples at my house because they’re quick, full of flavor, and reliably popular with everyone. I love experimenting with that same smashed technique, which is why I turned my favorite Caesar salad into tacos. My oldest son loves Caesar salad, so I figured these would be a hit — and they exceeded my expectations. These tacos now earn a regular spot in our rotation.
While you can make the Caesar dressing and salad from scratch for maximum flavor, a good Caesar salad kit makes this dish faster and still delicious. That convenience is perfect for those busy weeknights when you want a fresh, satisfying dinner without too much fuss.

Chicken Caesar Smashed Tacos Ingredients
| Ingredient | Notes |
|---|---|
| Ground chicken | Ground chicken thighs stay especially juicy and flavorful. Regular ground chicken is fine too. |
| Seasonings | Combine gently and taste before adding extra salt — some chicken bases and dressings are already salty. |
| Flour tortillas | Use fajita-size tortillas and spread the chicken thinly to the edges. The mixture will shrink slightly as it cooks. |
| Caesar salad | Homemade Caesar salad is great, but a ready salad kit speeds things up without sacrificing flavor. |
| Parmesan & lemon | Finish with freshly grated Parmesan, cracked black pepper, and an optional lemon wedge for brightness. |

Chicken Caesar Smashed Tacos Tips
- Press the chicken thin: A thin, even layer browns more deeply and crisps along the edges, adding texture and flavor.
- Don’t flip too soon: Let the meat form a deep golden crust before turning. If it sticks, wait an additional 15–30 seconds or use a small amount of oil.
- Cook in batches: Avoid overcrowding the pan so the chicken can brown properly; overcrowding lowers the surface temperature.
- Dry the lettuce well: Excess moisture will dilute the dressing and make the salad soggy. Spin or pat the leaves until dry.
Storage
These tacos are best served right away while the tortillas remain crisp and the salad is cold and crunchy. Store cooked tacos separately from the salad, dressing, and croutons. Reheat the tacos in a skillet or air fryer, then top with freshly dressed Caesar salad just before serving.

Equipment
- Electric griddle, flat-top griddle, or large cast iron skillet
Ingredients
- 1 pound ground chicken (ground thighs if available)
- 1 tablespoon roasted chicken base or similar chicken seasoning
- 1 tablespoon Italian seasoning
- Salt and pepper to taste (add salt only if needed)
- Tiny pinch red pepper flakes (optional)
- 6 flour tortillas, fajita-size
- 1–2 tablespoons vegetable oil, if needed (for stainless steel pans)
- 1 batch prepared Caesar salad with dressing (or use a Caesar salad kit)
- Freshly grated Parmesan cheese for topping
- 1 large lemon, cut into wedges (optional, for serving)
Instructions
- Prepare the Caesar salad ingredients first. If making the dressing from scratch, make it and chill so the flavors meld. Chop, wash, and thoroughly dry the lettuce. Crush the croutons lightly. Do not toss the salad with dressing yet; wait until you are ready to serve.
- Heat the cooking surface: preheat an electric griddle to 400°F or heat a cast-iron skillet over medium-high heat until very hot.
- Season the chicken: in a medium bowl, combine ground chicken, roasted chicken base, Italian seasoning, black pepper, and red pepper flakes if using. Mix gently until just combined; avoid overworking the meat.
- Form the tacos: divide the chicken mixture into six equal portions. Press one portion into a very thin, even layer over one side of each tortilla, spreading to the edges.
- Cook the chicken side: lightly oil the griddle or skillet if needed. Place the tortillas chicken-side down on the hot surface. Press each one firmly with a burger press or the bottom of a saucepan for about 5 seconds to ensure contact. Cook 3–4 minutes, or until the chicken is deeply browned and reaches 160°F.
- Finish the tortillas: cook an additional 30–60 seconds, or until the tortilla is lightly golden and crisp. Taste and add a small pinch of salt if needed. As each taco finishes, fold it gently into shape so it holds the salad. Cook in batches to prevent overcrowding.
- Finish the salad: toss only the amount of lettuce you plan to serve immediately with Caesar dressing, Parmesan, and crushed croutons. Keep any leftovers undressed so they stay fresh.
- Assemble and serve: top each taco with a generous pile of dressed Caesar salad and grate extra Parmesan over the top. Finish with freshly cracked black pepper and serve with lemon wedges and extra Caesar dressing for dipping.
Recipe Notes
Shortcut: A Caesar salad kit saves time and still delivers great flavor — perfect for quick weeknight dinners.
Storage: Keep the cooked tacos separate from the lettuce, dressing, croutons, and Parmesan. Only dress the salad you’ll eat right away to prevent wilting and soggy croutons. Reheat tacos in a skillet or air fryer, then top with freshly dressed Caesar salad before serving.
