Herb Vinaigrette Dressing (See Note 1)
  • 6 tablespoons red wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 1 clove garlic
  • 1 tablespoon fresh flat-leaf parsley
  • 1 tablespoon fresh cilantro or fresh basil
  • 2-1/2 tablespoons granulated sugar
  • 1/2 cup olive oil
  • Salt and pepper (to taste)
Optional Grilled Chicken Addition (See Instruction #1)
  • 2 large boneless, skinless chicken breasts
  • 1/3 of the dressing recipe (see note 1)
Salad Components
  • 8 cups spring mix lettuce blend (a 50/50 blend of spinach and spring mix leaves works wonderfully)
  • 2 to 3 hard-boiled eggs (peeled and diced or sliced, see note 2 for how to cook)
  • 1/3 cup crumbled center-cut bacon (from 6–7 slices, cooked to crispy perfection)
  • 1/3 cup frozen shelled edamame or sweet peas
  • 2/3 cup grape tomatoes (halved)
  • 1 large avocado (diced)
  • 1/2 cup corn (fresh corn you’ve grilled, fire-roasted canned corn, or thawed frozen corn)
  • 1/2 cup goat cheese (or feta cheese, goat is my favorite)
  • 1 lemon (optional, for avocado)

Instructions

  • Optional Recipe Shortcuts: To save time, you can either omit the chicken entirely or use pre-cooked rotisserie chicken, which is both delicious and tender. Leftover grilled chicken also works wonderfully. For the eggs, consider purchasing store-bought hard-boiled eggs to bypass the cooking and sometimes frustrating peeling process. Many stores offer prepared hard-boiled eggs. Lastly, for the bacon, opt for pre-cooked slices. Simply warm them in the microwave according to package directions until crispy, then crumble them directly into your salad.
  • Prepare the Dressing: Refer to Note 1 regarding the dressing quantity. In a small blender, combine the red wine vinegar, Dijon mustard, minced garlic, fresh parsley, fresh cilantro (or basil), salt and pepper (start with about 1/2 teaspoon of each, then adjust to your taste preference), and granulated sugar. Blend these ingredients until they are completely smooth. Once blended, slowly add the olive oil while pulsing the blender to emulsify the dressing. Be careful not to over-blend. Taste the dressing and adjust seasonings as needed, adding more salt, pepper, or sugar for balance. Transfer the finished dressing to a jar and refrigerate until you’re ready to use it. Remember to give it a good shake before drizzling over the salad.
  • Optional Grilled Chicken: If you’re adding grilled chicken, slice each chicken breast horizontally to create two thinner cutlets. Place these chicken breasts in a large plastic bag. Pour approximately 1/3 of the prepared dressing over the chicken (you can eyeball this amount). Seal the bag, pressing out any excess air, and gently knead to ensure the chicken is thoroughly coated in the dressing. Refrigerate for at least 30 minutes, and up to 4 hours. Avoid marinating longer than 4 hours, as the acidity from the vinegar can begin to “cook” the chicken, altering its texture.
  • Grill the Chicken: Remove the marinated chicken from the bag, discarding the remaining marinade. Preheat your grill (or a grill pan) to medium-high heat. Cook the chicken for 4–5 minutes on each side, or until the juices run clear and the internal temperature reaches 160°F (71°C) with a food thermometer. Once cooked, remove the chicken from the grill, tent it loosely with foil, and let it rest for about 10 minutes to allow the juices to redistribute. After resting, slice or chop the chicken into bite-sized pieces (see Note 1 for more details).
  • Prepare Salad Toppings: Peel and either dice or slice your hard-boiled eggs (refer to Note 2 if you are cooking them from scratch). Cook and crumble or finely dice the bacon until it’s perfectly crisp. Boil the frozen edamame according to package directions, then drain thoroughly. Halve the grape tomatoes. Dice the avocado; to prevent browning, you can optionally squeeze some fresh lemon juice over it immediately after dicing. Prepare the corn: if using canned, drain it well; if using fresh corn on the cob, grill it (see Note 3); if using frozen, thaw it. Finally, arrange the fresh lettuce blend in a large salad bowl or on a serving platter.
  • Assemble and Serve: Artfully layer all the prepared ingredients onto the bed of lettuce. Arrange the grilled chicken (if using), hard-boiled eggs, crumbled bacon, edamame, grape tomatoes, diced avocado, and corn in appealing sections. Sprinkle the goat cheese or feta cheese crumbles evenly over the top. Just before serving, drizzle the homemade herb vinaigrette over the salad, adding it to your preference. It’s important to only dress the portion of the salad you plan to eat immediately, as the dressing doesn’t store well once combined with the salad components (see Note 4).

Recipe Notes

Note 1 – Dressing for Chicken: If you decide to include grilled chicken, prepare the full recipe for the herb vinaigrette dressing. Use approximately 1/3 of this dressing to marinate the chicken, reserving the remaining 2/3 for dressing the final salad. If you opt not to include chicken, you have two choices: either halve the dressing recipe, or make the full amount and store any unused portion in an airtight container in the refrigerator for up to 1 week.

Note 2 – How to Hard-Boil Eggs: Place your desired number of eggs in a large saucepan or pot. Cover them with cold water, ensuring the water level is about 1 inch above the eggs. Cover the pan with a lid and bring the water to a rolling boil over high heat. Once boiling, immediately reduce the heat to medium-high and continue to boil for 6–7 minutes. Promptly remove the eggs with a slotted spoon and transfer them to a large bowl filled with ice-cold water to cool for a few minutes. Alternatively, place them under cold running water. Once cooled, peel the eggs and chop or slice them as desired for your salad.

Note 3 – Grilling Corn: For detailed instructions on how to grill corn on the cob, please refer to our Elote post. Generally, I use one ear of sweet corn for this recipe, grilling it on an indoor grill pan until slightly charred and tender. Allow it to cool slightly before cutting the kernels off the cob and adding them to the salad.

Note 4 – Dressing and Storage: This salad does not store well once it has been dressed, as the greens can wilt and other ingredients may become soggy. To maintain the freshest texture and flavor, only mix the amount of salad you plan to eat immediately. Keep all salad toppings and the dressing stored separately.
