Ingredients

  • 1 (14-ounce) can lite coconut milk
  • Salt and pepper
  • 2 green onions divided, very thinly sliced

  • 2 heaping cups cremini mushrooms 6 ounces
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons Sriracha or chili paste for more heat
  • 4 teaspoons dark brown sugar or light brown sugar, divided
  • 4 tablespoons canola oil or vegetable oil, divided
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon finely minced ginger
  • 1/8 teaspoon crushed red pepper flakes optional
  • 1 head Boston lettuce or Butter or Bibb lettuce
  • 1/4 cup chopped, roasted, and salted cashews optional
  • 1 to 2 small Persian cucumbers cut in half moons
  • Drizzle of toasted sesame oil or fresh lime juice, optional

Instructions

  • 1. Prepare Coconut Rice: Preheat oven to 425℉ (220°C). In a small pot, combine basmati rice, lite coconut milk, and 1/4 teaspoon salt. Stir gently. Bring the mixture to a boil over high heat, then immediately reduce the heat to low, cover the pot tightly, and let it simmer for about 15–20 minutes, or until the coconut milk is fully absorbed and the rice is tender. Remove the pot from heat (keeping it covered) and let it stand undisturbed for 10 minutes. This resting period ensures perfectly fluffy rice. Finally, fluff the rice with a fork and gently stir in one finely sliced green onion. Set aside and keep warm.
  • 2. Prepare and Roast Veggies: While the rice cooks, peel your sweet potato and cut it into 1/2-inch rounds, then chop the rounds into uniform 1/2-inch pieces. Quarter the cremini mushrooms. In a small bowl, whisk together the soy sauce, Sriracha sauce, 3 teaspoons of brown sugar, and 1 tablespoon of canola oil to create your glaze. Line a large sheet pan with parchment paper (this helps immensely with sticky cleanup!). Place the chopped sweet potatoes and mushrooms onto the prepared sheet pan and pour the glaze mixture over them. Stir everything well to ensure the veggies are thoroughly coated. In a separate small bowl, whisk together the rice wine vinegar, the remaining 3 tablespoons of canola oil, the remaining teaspoon of brown sugar, the finely minced ginger, and the remaining thinly sliced green onion. Season the dressing to taste with salt. If you like a little extra heat, stir in the crushed red pepper flakes (optional). Continue whisking until the dressing is thoroughly combined and smooth.
  • 4. Assemble and Serve: Wash your Boston (or Butter/Bibb) lettuce leaves and dry them thoroughly yet gently. Depending on your lettuce thickness, you can double up 2 pieces or use single pieces. Fill each lettuce cup with a generous spoonful of the warm coconut rice. Top with a hearty portion of the roasted sweet potatoes and mushrooms. Drizzle the green onion vinaigrette generously over the filling. If desired, garnish with chopped, roasted, and salted cashews and thinly sliced Persian cucumber pieces for added crunch and freshness. Season with additional salt and pepper if needed. For a final flourish, add a tiny drizzle of toasted sesame oil or a squeeze of fresh lime juice (both optional).
