I’ve been amazed by how much everyone loved my baked chicken thighs recipe. Reading your reviews brings me so much joy — thank you! Many of you asked about different spice blends, so I experimented and landed on a Greek version that I use constantly in summer.

These thighs are perfect for gyros, rice bowls, or pita tacos. I keep a batch ready to slice and toss into quick, flavorful meals all week long.

Ingredients

  • 1 pound boneless, skinless chicken thighs 3–4 thighs, see note 1
  • 4 teaspoons olive oil
  • 2 teaspoons balsamic vinegar
  • Salt and pepper (about 1 tsp salt & 1/2 tsp pepper)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried dill optional
  • 1 large lemon cut into wedges

Instructions

  • Preheat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil for easy cleanup. Pat the chicken thighs dry with paper towels. There’s no need to trim excess fat; it will render as the chicken cooks.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, garlic powder, onion powder, paprika, oregano, basil, and dill (if using). Rub or brush the mixture over both sides of each thigh until evenly coated.
  • Arrange the thighs flat on the prepared sheet pan, spacing them so air can circulate. Bake in the center of the oven for 15 minutes.
  • Move the rack about 8 inches from the heat source and switch the oven to broil. Broil for 7–10 minutes, watching closely, until the tops are browned, lightly charred, and caramelized.
  • Remove from the oven and spoon pan juices over the chicken. Squeeze fresh lemon juice over the thighs to brighten the flavors. Slice or chop as desired and serve with lemon wedges.

Recipe Notes

Note 1: Pick thighs similar in size for even cooking. Aim for about 1 pound total (3–4 thighs). Larger thighs may need a few extra minutes; cook to an internal temperature of 165°F (74°C).
Note 2: Dried dill adds a nice brightness, but it’s optional—omit if you prefer.
Note 3: Serving ideas: lemon rice, cucumber-tomato salad, tzatziki, olives, feta, and warm pita. This chicken also pairs well with roasted potatoes or a simple green salad.
Storage: Store leftovers in an airtight container in the fridge up to 5 days, or freeze up to 2 months. Thaw overnight in the fridge before reheating.
