  • 1 tablespoon melted coconut oil
  • 1 tablespoon maple syrup
  • 1/8 teaspoon salt see note 2
  • 1/4 teaspoon vanilla extract
Chocolate Coating
  • 1/2 cup dark chocolate
  • 1/2 teaspoon coconut oil
  • Flaky sea salt optional, for topping

Instructions 

  • If your dates are hard, refer to note 3 for softening instructions. Using a sharp serrated knife, carefully cut the dates into smaller pieces. Transfer these pieces to a food processor. Pulse, making sure to scrape down the sides of the bowl as needed, until the dates form a thick and sticky mixture. Next, add the remaining date “caramel” ingredients to the food processor. Continue pulsing until a completely smooth mixture forms. This step requires some patience; keep scraping the edges with a spatula to ensure all ingredients are thoroughly combined and you achieve the perfect consistency. Once smooth, use a spatula to transfer the entire mixture into a small bowl. Cover the bowl and chill in the refrigerator for at least 30 minutes. Don’t worry if a small amount of oil pools in the bowl; this is normal.
  • While the date mixture chills, line a plate or baking tray with parchment paper. Once the mixture has chilled for 30 minutes and is easier to handle, begin rolling it into small, uniform balls, approximately 1 teaspoon in size. If the mixture is too soft to roll easily, return it to the refrigerator for a bit longer until it firms up. After all the balls are rolled, place them back in the refrigerator to chill for another 30 minutes. This second chilling step is crucial for ensuring they hold their shape when dipped in chocolate.
  • In a microwave-safe bowl, combine the dark chocolate chips and coconut oil.
