  • 1-1/2 tablespoons olive oil
  • 1 cup finely diced yellow onion
  • 2 teaspoons finely minced garlic (2 to 3 cloves)
  • 1 pound ground turkey (93/7; or ground chicken—thigh meat preferred)
  • Salt and pepper to taste
  • 1-1/2 cups frozen corn
  • 1-1/2 cups frozen sweet peas
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken stock or broth (Swanson is a favorite)
  • 2-1/4 cups whole milk (see Note 1)
  • 1-1/2 cups uncooked orzo pasta
  • 1 cup freshly grated Parmesan cheese (see Note 2)
  • 1/2 cup basil pesto (see Note 3)
  • 1/3 cup finely chopped flat-leaf parsley (optional, for garnish)

Instructions
