  • Veggies and Meat:
    • 1/2 cup thinly sliced celery (approximately 2 medium stalks, finely sliced for even cooking)
    • 1/2 cup finely chopped yellow onion (about 1/2 of a large onion, diced small)
    • 1 cup diced green bell pepper (approximately 1 small pepper, diced)
    • 1-1/4 cup diced zucchini (about 1 small zucchini, optional; can substitute with more bell pepper)
    • 1 (13-ounce) package Cajun-style andouille smoked sausage, sliced into 1/2-inch thick coins
    • 1 (14.5-ounce) can fire-roasted diced tomatoes, thoroughly drained (adds smoky depth)
    • 2 tablespoons tomato paste (for concentrated tomato flavor and richness)
    • Fresh parsley (optional, for garnishing after cooking)

Instructions

  1. In a small bowl, thoroughly mix together the uncooked instant rice and the chicken stock. Allow this mixture to stand undisturbed for approximately 10 minutes. This crucial step permits the rice to begin softening and absorbing foundational flavors. It is important not to pre-cook the rice beyond this soak, and do not drain any remaining liquid; it is essential for cooking in the foil.
  2. Preheat your chosen cooking appliance: set your oven or grill to a temperature of 400°F (200°C). Tear off four individual sheets of heavy-duty aluminum foil, ensuring each piece is generously sized at about 2 feet long. Liberally spray the entire inside surface of each foil sheet with nonstick cooking spray to prevent any sticking during cooking.
  3. Carefully prepare your vegetables: very thinly slice the celery, finely chop the yellow onion, and dice the green bell pepper. If you are opting to use zucchini, coin it into relatively thick (3/4-inch) pieces. Slice the pre-cooked andouille sausage into uniform 1/2-inch thick coins. Thoroughly drain the can of fire-roasted diced tomatoes.
  4. In a very large mixing bowl, combine the prepared celery, onion, bell pepper, zucchini (if using), and the sliced andouille sausage. Add the tomato paste and the thoroughly drained diced tomatoes. Incorporate all the specified seasonings: the olive oil, Cajun seasoning, ground cayenne pepper, dried parsley, dried thyme, along with salt and pepper to taste (a good starting point is a heaping 1/4 teaspoon salt and 1/8 teaspoon pepper). If you wish for additional heat, now is the time to add the diced jalapeño. Gently stir all these ingredients until they are uniformly combined and well-coated. Finally, add in the soaked rice along with any residual liquid from its bowl. Gently stir again until the rice is thoroughly and evenly incorporated into the entire mixture.
  5. Divide the jambalaya mixture evenly among the 4 prepared sheets of foil. Each packet should contain approximately a heaping 1 and 1/2 cups (330g) of the mixture. To seal each foil pack tightly, bring the two shorter sides of the foil together in the middle and gently fold them down several times to create a robust, secure seam. Then, meticulously roll up the remaining open ends of the packet. Ensure that the foil packs are sealed effectively so that no air escapes, but also allow for a small amount of internal space for steam to circulate efficiently during the cooking process (refer to Note 2 for more on sealing).
  6. To Cook in Oven: Place the sealed foil packs directly onto your oven racks and bake for 30–40 minutes (I find they achieve their best texture, with crisp-tender veggies, at approximately 35 minutes).

    To Cook on Grill: Place the packets on a preheated medium-high grill (around 450°F / 230°C) for 25–30 minutes, remembering to flip them once halfway through the cooking time.

    To Cook over Campfire: Carefully place the sealed foil packs directly into hot coals for 20-40 minutes, making sure to flip them every 5 minutes to ensure even cooking and prevent scorching. If your coals are very hot, cooking can be as quick as 20 minutes.

    Continue cooking until the instant rice is fully cooked through and the vegetables have reached your desired tenderness. To test for doneness, carefully open just one packet (be prepared for a burst of hot steam!) and check the rice and veggies. Avoid opening multiple packets unnecessarily, as each time steam escapes, the overall cooking time will be extended.
  7. Once cooked to perfection, carefully open each foil pack, exercising caution due to the hot steam that will be released. If desired, garnish generously with fresh chopped parsley for an added burst of color and fresh flavor. Allow the jambalaya to cool slightly for a few minutes before tasting and adjusting any additional seasoning (such as salt, pepper, or a dash of hot sauce) as needed to achieve your perfect flavor balance.
