Cook, stirring constantly, until the juice is reduced by about half, which should take approximately 1–2 minutes.
  3. Reduce the heat to medium. Stir in the tomato paste, beef bouillon powder, and Worcestershire sauce until well combined. Add the fire-roasted crushed tomatoes and stir again. Introduce the bay leaves and bring the sauce to a gentle simmer. Allow it to simmer, uncovered, for 10–15 minutes, or until the sauce has noticeably thickened and become wonderfully fragrant, stirring occasionally to prevent sticking. Taste the sauce and adjust to your personal preference, adding more salt and pepper as needed. Also, check for sourness – if you’ve used high-quality tomatoes, it shouldn’t be overly sour. However, on occasion, a teaspoon or so of granulated sugar can effectively balance out the acidity.
  4. There are two fantastic ways to serve this Bolognese: either emulsify the pasta directly with the sauce (the authentic Italian way, skip to step #7 below) or simply spoon the delicious sauce over your cooked pasta.
