I Don’t Think I’ve Ever Enjoyed Veggies More!

WOW. This sandwich might be my favorite way to eat vegetables. It’s a great way to use up produce in the fridge while keeping every bite bright and satisfying.

I usually keep the ingredients simple: spinach or mixed greens, carrots, cucumbers, tomatoes, and cooked or jarred beets. Avocado is a must for creaminess. Pick a sturdy whole-grain bread, toast it, mash the avocado with a little lemon and seasoning, toss the vegetables with a light dressing, and assemble. It’s crunchy, fresh, and genuinely craveable.

How To Make This Veggie Sandwich

  1. Make the dressing: Combine all dressing ingredients in a small jar and shake until smooth.
  2. Prep the carrots: Grate the carrot, toss with half the dressing, and let it sit 1–2 minutes to soften.
  3. Mash the avocado: Add avocado to a small bowl with a squeeze of lemon and a pinch of salt, pepper, and garlic powder. Mash until smooth.
  4. Toast and mayo: Toast the bread and spread a thin layer of mayo on each slice.
  5. Layer the sandwich: Spread mashed avocado on both slices. On the bottom slice, layer cucumbers, tomato rounds (lightly salted), beet slices, and the dressed carrots.
  6. Add the greens: Toss spinach or other greens with the remaining dressing, then pile them on top of the vegetables.
  7. Finish: Place the top slice of bread, press gently, slice in half, and serve immediately.

Ingredients

  • 2 slices whole-grain bread
  • Mayo light or regular
  • 1 medium carrot peeled, grated (~1/2 packed cup)
  • 1/2 ripe, large avocado
  • 1/8 teaspoon garlic powder
  • 1 teaspoon lemon juice optional
  • 1/2 cup baby spinach or similar greens
  • 1 small Persian cucumber thinly sliced lengthwise
  • 1/2 ripe tomato sliced into rounds (2–3 slices)
  • 2 small cooked beets store-bought or canned
  • Salt and pepper
Dressing:
  • 1/4 teaspoon Dijon-style mustard
  • 1/2 tablespoon apple cider vinegar
  • 1/2 tablespoon honey
  • 1 tablespoon olive oil
  • 1/8 teaspoon garlic powder

Instructions

  • Add all dressing ingredients to a small jar, seal, and shake until combined.
  • Place grated carrot in a small bowl, pour in half the dressing, toss well, and let sit 1–2 minutes.

  • Toss spinach with the remaining dressing, add to the sandwich, top with the other slice of bread, press gently, and slice in half.
