With several vegetarians in our extended family, I embarked on a mission years ago to create a veggie burger so good it could stand proudly alongside its meat counterparts. It was a journey filled with much experimentation, numerous tests, and certainly a few (okay, more than a few!) culinary missteps. Achieving the perfect balance of flavor, texture, and structural integrity for a sturdy burger that doesn’t crumble on the grill or in your hands is a surprisingly tricky art.

After dedicated effort and refining the recipe over time, I finally achieved a masterpiece. This black bean burger recipe is robust, flavorful, and holds its shape beautifully.   1. Prepare and Pulse Base Ingredients: Begin by grating your yellow or red onion on the large holes of a grater and finely dicing your red pepper and cremini mushrooms. Add the cashews (or walnuts) to a large food processor and pulse them about 10 times until they are coarsely chopped. Scrape down the sides of the bowl to ensure even processing. Next, add the prepared onion, red pepper, mushrooms, drained and rinsed black beans, minced garlic, chili powder, paprika, cumin, garlic powder, salt, and pepper to the food processor. Pulse the mixture about 5 times, then scrape the sides and pulse another 5 times. Continue this process until all the base ingredients are well combined and have a uniform, slightly chunky texture. This ensures everything is evenly distributed and contributes to the burger’s structure.
  2. Incorporate Wet Binders: To the processed mixture, add the ketchup, Worcestershire sauce, and a large egg. These wet ingredients are vital for binding everything together and adding a rich depth of flavor. Pulse the food processor about 10 more times, making sure to stop and scrape and stir between pulses. This step is crucial for fully combining the wet binders with the dry ingredients, ensuring your patties will hold together beautifully.
  3. Add Dry Stabilizers and Rice: Finally, add the Panko breadcrumbs and shredded cheese to the mixture. Pulse about 10 times, stirring again in between to integrate them well. Pulse just 3 times, scrape the edges, and pulse 3 more times. Be careful not to over-mix the rice; you want it incorporated, not completely broken down, as it adds a pleasant texture. If the mixture appears too wet, add a little extra Panko. If it’s too crumbly, pulse a couple more times until it reaches a manageable consistency that can be shaped.
  4. Shape and Chill the Patties: Using a 1/2-cup measuring cup, scoop the burger mixture onto a parchment or foil-lined sheet pan. This should yield about 9 mounds.   • 1/2 cup dry roasted cashews or walnuts
  • 1/2 cup grated yellow onion or red onion (see note 1)
  • 1/2 cup diced red pepper
  • 3/4 cup chopped cremini mushrooms or baby bella
  • 2 (15.25-ounce) cans black beans, drained and rinsed
  • 1 tablespoon minced garlic
  • 2-1/2 teaspoons chili powder
  • 2-1/2 teaspoons cumin
  • 2-1/2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1-1/4 cups panko breadcrumbs
  • 1 cup shredded cheese (Monterey Jack, Pepper Jack, or Cheddar work best, see note 2)
  • 3/4 cup cooked brown rice or white rice (see note 3)

Instructions

  1. Grate an onion on the large holes of a grater. Dice a bell pepper and mushrooms finely. Add cashews to a large food processor. Pulse 10 times, just until coarsely chopped. Scrape the sides to mix evenly. Then add red onion, red pepper, mushrooms, black beans, garlic, chili powder, paprika, cumin, garlic powder, salt, and pepper. Pulse 5 times, scrape the sides, then pulse another 5 times. Repeat until well mixed and uniform.
  2. Add ketchup, Worcestershire sauce, and egg to the processor. Pulse about 10 times, scraping and stirring between pulses to fully combine all the wet ingredients with the solids.
  3. Add panko breadcrumbs and shredded cheese to the mixture. Pulse about 10 more times, stirring in between. Finally, add the cooked rice. Pulse 3 times, scrape the edges, and pulse 3 more times—just enough to incorporate the rice without breaking it down completely. This maintains some texture. Adjust consistency with extra panko if the mixture is too wet, or pulse longer if it remains crumbly.
  4. Scoop the mixture using a 1/2-cup measuring cup and drop it onto a parchment or foil-lined sheet pan to form 9 mounds. Distribute any remaining mixture evenly among these mounds. Lightly spray your hands with cooking oil and shape each mound into a patty by gently pressing it down. Each patty should be about 3/4-inch thick and 4 inches wide, or slightly wider than your burger buns to account for shrinkage during cooking. Place the shaped patties in the freezer for 25–30 minutes, until they are firm enough to be lifted gently with a metal spatula without falling apart.
  5. Heat a drizzle of oil, approximately 2 tablespoons, in a large skillet or on a griddle over medium-high heat. Once the oil is hot and shimmering, carefully add 3 patties straight from the freezer to the pan. Cook until they are beautifully browned, golden, and crispy on the underside, which usually takes about 3–4 minutes. Carefully flip each patty, then cook the other side for another 3–4 minutes or until it’s deeply golden and cooked through. Transfer the cooked burgers to a paper-towel-lined plate to absorb any excess oil. Cook the next batch using the same method, being careful not to crowd the pan.
  6. To prepare a homemade burger sauce, please refer to note 5 below. Toast your chosen burger buns until golden. Assemble your burger by layering fresh green leaf lettuce, a cooked black bean veggie patty, creamy avocado slices, juicy tomato, and thinly sliced red onion. Spread mayonnaise or the homemade burger sauce generously on the top bun. Sandwich all the delicious components together and enjoy your homemade black bean burger promptly while it’s warm and at its best.

Note 1: For optimal flavor and minimal waste, I often use half of a large onion, grating it finely for the burger patties. The other half can then be thinly sliced and used as a fresh topping for the finished burgers.

Note 2: When it comes to cheese, I find that Monterey Jack, Pepper Jack, or a sharp Cheddar cheese melt best and provide the most complementary flavors to the black bean patties.

Stir all ingredients together thoroughly until the sauce is well combined and smooth.
