Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrot
  • 1 tablespoon minced garlic
  • 2 cups butternut squash peeled and chopped (see Note 1)
  • 2 tablespoons tomato paste
  • 1 (1.25-ounce) packet mild chili seasoning mix (see Note 2 for homemade blend)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (14.5-ounce) can fire-roasted diced tomatoes undrained
  • 1 (16-ounce) can chili beans
  • 1 (15.25-ounce) can corn undrained
  • 1 (15.25-ounce) can black beans drained and rinsed
  • 1-1/4 pounds chicken thighs or breasts, cut into 2-inch chunks (see Note 3)
  • 3/4 cup quinoa (rinsed)
  • 5 cups chicken stock
  • 2 tablespoons lime juice (optional, but recommended)
  • 1/4 cup finely chopped cilantro

Instructions

  • Spray a 6-quart slow cooker with nonstick spray. Trim any excess fat from the chicken and cut it into 2-inch chunks. Rinse the quinoa thoroughly in a fine-mesh sieve and set it aside.
