  • 1 (15.25-ounce) can black beans, drained and rinsed
  • 2 (14.5-ounce) cans fire-roasted crushed tomatoes, undrained
  • 1 cup chicken stock or broth (or vegetable broth for vegetarian)
  • 2 cups sweet potatoes, peeled and chopped into 1/2-inch pieces
  • 1-1/2 cups thinly sliced bell peppers (e.g., 1/2 orange and 1/2 red pepper)
  • 1 fajita seasoning mix packet (or homemade blend, see note 3)
  • Tortillas (flour or corn)
  • Toppings as desired (see note 4)

Instructions

Combine the rinsed quinoa, chicken (if using; cut each breast into 4–5 even pieces and each thigh into 3–4 even pieces for even cooking), corn, black beans, crushed tomatoes, chicken stock, sweet potatoes, and bell peppers in the slow cooker. Add the fajita seasoning mix or the homemade seasonings listed in note 3. Gently stir all ingredients together, ensuring the chicken pieces are submerged below the other ingredients for best cooking.
  3. Cook for 3-1/2 to 4 hours on high heat. It is important to watch carefully so the quinoa does not burn (avoid opening the slow cooker too frequently, as this disrupts the heating process). We do not recommend cooking on the low setting for this recipe, as the quinoa tends to become too mushy. Cook until the chicken is easily shredded with two forks and the quinoa has “popped” and is tender. Remove the cooked chicken and thinly slice or shred it. Gently stir all ingredients together, then taste for seasonings and add salt and pepper as needed.
  4. Spoon the flavorful filling into charred or warmed tortillas (see note 5 for charring instructions) and serve immediately with your favorite optional toppings. For a truly authentic experience, fresh lime, fresh cilantro, sour cream, and sharp Cheddar cheese are highly recommended!

Note 1: This recipe was specifically developed for and tested in a slow cooker. Attempts to cook it in a pressure cooker or Instant Pot resulted in mushy quinoa and sometimes undercooked chicken. For best results, stick to a traditional slow cooker.

Note 2: While chicken breasts can be used, boneless, skinless chicken thighs tend to remain more tender and moist during slow cooking. Regardless of your choice, ensure chicken pieces are cut into smaller, even sizes (breasts into 4–5 pieces, thighs into 3–4 pieces) to cook through properly. For a vegetarian meal, simply omit the chicken and use vegetable stock/broth. To make this recipe vegan, follow the vegetarian suggestions and use non-dairy alternatives for any desired toppings.

Note 3: If opting for a homemade fajita seasoning blend instead of a packet, use the following: 2 teaspoons ground chili powder (McCormick for less heat), 1 teaspoon each of paprika, fine sea salt, granulated sugar, and ground cumin, and 1/2 teaspoon each of onion powder and garlic powder. Add 1/8 teaspoon of ground cayenne pepper, adjusting to your heat preference. You can easily make this blend in bulk and store it; use approximately 1 tablespoon of homemade mix per batch.

Note 4: Recommended toppings include: shredded extra-sharp Cheddar cheese, low-fat sour cream or Greek yogurt, fresh chopped cilantro, fresh lime wedges, sliced avocado or guacamole, and/or chopped cherry tomatoes. Pickled red onions also make a fantastic addition!

Note 5: To char tortillas (optional, but highly recommended for flavor): First, lightly spray both sides of your tortillas with cooking spray (olive oil or canola based). Then, using tongs, very lightly char each side of the tortilla directly over an open flame on a stovetop burner for a few seconds. If you don’t have an open flame, you can warm them in a dry skillet for 10–15 seconds per side. Immediately remove from heat and fold in half. Place under a clean kitchen towel to keep warm and pliable while you char the remaining tortillas. This method creates a wonderful texture and slight smoky flavor.

Storage: Store any leftover fajita filling in an airtight container in the refrigerator for up to 3 days. Keep tortillas separate to prevent them from becoming soggy. Reheat the filling gently and assemble with fresh, warm tortillas when you’re ready to enjoy.
