  1. Zest 1 lime to obtain 1/2 teaspoon of zest, and then juice 2 limes to get 4 tablespoons of fresh lime juice. In a medium bowl, combine the mayonnaise, lime zest, lime juice, Sriracha, and granulated sugar. Season with salt and pepper to taste. Stir all ingredients together thoroughly, then taste and adjust lime or Sriracha levels according to your personal preference for tanginess and spice.
  2. Prepare the mangoes by peeling and thinly slicing them until you have about 1 cup. Thinly slice the green cabbage to yield 2 cups. Coarsely chop the cilantro to measure 1 cup.
