- 1-1/4 cups chicken stock
- 1 (16-ounce) package shelf-stable gnocchi
- 2 cups chopped rotisserie chicken
- 2 cups coarsely chopped baby spinach
- 1/2 cup freshly grated Parmesan cheese
- Fresh parsley (optional, for garnish)
Instructions
- Preheat Oven: Position a rack in the upper third of your oven and preheat to 425°F (218°C).
- Sauté Vegetables: Place a large oven-safe pan (a 12-inch cast-iron pan works great) over medium-high heat on the stovetop. Add the olive oil. Once the oil is hot, add the diced onion and sliced mushrooms.
