  • 2 tablespoons coconut oil or olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • 1 tablespoon finely minced garlic
  • 1 tablespoon minced ginger

  • 1 tablespoon yellow curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups vegetable stock or chicken stock
  • 1 (14.5-ounce) can fire-roasted crushed tomatoes
  • 1/2 cup red lentils (see note 1)
  • 2 (15.5-ounce) cans chickpeas, drained and rinsed
  • 1 (13.5-ounce) can coconut milk (full-fat, divided, see note 2)
  • Toppings as desired (see note 3)

Instructions

  1. Open the can of full-fat coconut milk and stir it well to combine the cream and liquid. Carefully remove 1/3 cup of the coconut milk and set it aside; this will be used for drizzling later.
  2. In a large, heavy-bottomed pot or Dutch oven, heat the coconut oil (or olive oil) over medium heat. Add the diced yellow onions and carrots to the pot. Season lightly with salt and pepper to taste. Cook, stirring occasionally, until the vegetables are tender and slightly softened, which should take about 8–10 minutes.
  3. Add the finely minced garlic, minced ginger, yellow curry powder, ground cumin, paprika, optional red pepper flakes, the remaining salt, pepper, and tomato paste to the pot. Continue to cook, stirring frequently, for another 2–4 minutes, until the mixture is very fragrant and the tomato paste has darkened slightly. Add the can of undrained crushed tomatoes, scraping any browned bits from the bottom of the pan, and cook for 1 minute more.
  4. Stir in the rinsed red lentils, vegetable stock, and all of the coconut milk from the can, except for the 1/3 cup you set aside earlier (see note 4 regarding chickpeas). Bring the soup to a rolling boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 10 minutes.
  5. After 10 minutes of simmering, add the drained and rinsed chickpeas to the pot. Return the lid and continue to cook for another 10 minutes, allowing the flavors to meld and the chickpeas to warm through.
  6. Carefully remove the lid from the pot. Using a ladle, transfer about 2 cups of the hot soup into a blender. Purée the soup until it is completely smooth and creamy (see note 5 for blending safety). This blended portion will add thickness and body to the entire soup.
  7. Pour the puréed soup back into the main pot with the remaining soup. Stir in the fresh lemon zest, fresh lemon juice, and finely chopped cilantro. Taste the soup and adjust the seasonings as needed, adding more salt, pepper, or spices to your preference. If you desire an even thicker soup, you can blend a bit more of it.
  8. Ladle the warm Chickpea Soup into individual bowls. Drizzle the reserved 1/3 cup of coconut milk on top of each serving for an extra creamy finish and beautiful presentation. Note 2: For the best flavor and creamy thickness, look for shelf-stable, unrefrigerated cans of full-fat coconut milk, typically found in the international or Asian food aisle of your grocery store. Lite coconut milk will result in a thinner soup and less rich flavor profile.

Note 3: We highly recommend topping this soup with 2–3 tablespoons of fresh lemon juice, 1/2 teaspoon of lemon zest, 1/4 cup of finely chopped fresh cilantro, and a scattering of fresh mint leaves. These fresh additions provide a bright contrast to the hearty soup.

Note 4: I like the chickpeas to still have a nice chewiness to them, so I add them after the lentils have already simmered for 10 minutes. If you’d prefer softer chickpeas that melt into the soup, add them in along with the lentils in step 3.

Note 5: When blending hot liquids, always secure the blender lid tightly. If your blender has a “soup” or “hot” cycle, use it. Otherwise, start on the lowest speed and slowly increase it to prevent splattering. For blenders without a hot setting, replace the central cap of the lid with a folded towel and hold it in place with your hands; this helps release steam pressure safely while blending.

Storage: This soup becomes more flavorful as it sits and can be stored in an airtight container in the fridge for 4–5 days.
