Crafting Your St. Patrick’s Day Popcorn: A Simple Guide
Making this festive popcorn is straightforward and fun! Follow these key steps to ensure a perfect batch every time:
- Perfect Popcorn Preparation: Begin with freshly popped popcorn for the best taste and crisp texture. It’s crucial to remove any unpopped kernels to prevent unpleasant surprises. For a quick hack to eliminate them, place the popcorn in a large bowl, cover it with a cooling rack, then flip and gently shake. The unpopped kernels will fall through, leaving you with perfectly fluffy popcorn.
- Mastering White Chocolate Melting: When melting your white chocolate, use a microwave-safe bowl and heat in short 30-second intervals. Stir thoroughly after each burst. This gentle approach prevents the chocolate from scorching, ensuring a smooth, creamy consistency that will evenly coat your popcorn.
- The Art of Mixing: Utilize a generously sized bowl to combine the popcorn and melted white chocolate. This provides ample space to toss everything together effectively without creating a mess, ensuring every kernel is beautifully coated.
- Swiftly Incorporate Mix-Ins: Speed is key! As soon as the popcorn is coated in chocolate, immediately add your M&M’s, Lucky Charms marshmallows, and sprinkles. Stir quickly so these festive additions adhere to the warm chocolate before it begins to set.
- Achieving the Perfect Set: Spread your popcorn mix onto a sheet pan lined with parchment paper or a silicone baking mat. Allow it to harden at room temperature. If you’re short on time, a quick stint in the refrigerator will speed up the setting process, giving you solid, breakable chunks sooner.
Pro Tip: Removing Unpopped Kernels Like a Pro
To efficiently separate those pesky unpopped kernels, place your popped popcorn into a large mixing bowl. Drape a sturdy cooling rack over the bowl, then carefully invert the entire setup. Give it a good shake, and watch as the small, unpopped kernels fall through the rack, leaving only the fluffy popcorn behind. Scoop out your perfect popcorn, and you’re ready to proceed with the recipe!

Key Ingredients for Your St. Patrick’s Day Popcorn
Each component plays a vital role in creating this irresistible snack. Here’s a closer look at what you’ll need and some tips for choosing the best:
- Popcorn: While pre-popped popcorn offers ultimate convenience, popping your own ensures peak freshness. You can use microwave popcorn packets (preferably lightly salted or unbuttered), a dedicated popcorn machine, or stovetop kernels. The goal is 10 cups of plain or lightly salted popcorn.
- White Chocolate: For a flawlessly smooth melt and superior coating, opt for high-quality white chocolate melting wafers or premium white chocolate chips. These are designed to melt evenly without seizing.
- Oil (Vegetable or Canola): A small amount of vegetable or canola oil (or even shortening) added to the white chocolate before melting helps create a wonderfully smooth, glossy consistency, making it easier to coat the popcorn evenly.
- M&M’s: We love a mix of textures and sizes! For an extra festive touch, pull out the green M&M’s, but feel free to use a variety of plain milk chocolate, miniature, pretzel, or crunchy cookie M&M’s for diverse flavors and crunch.
- Lucky Charms Marshmallows: These iconic marshmallows are key to the St. Patrick’s Day theme! You can carefully pick them out of Lucky Charms cereal or conveniently purchase bags of just the marshmallows online.
- Green Sprinkles: While optional, green sprinkles add a fantastic burst of color and a delightful subtle crunch, enhancing both the visual appeal and texture of your snack mix.

Optimal Storage for St. Patrick’s Day Popcorn
To enjoy this festive popcorn at its absolute best, we recommend consuming it fresh within 1-2 days of preparation. The crunchy texture of the popcorn, especially when coated with white chocolate, can soften over time.
Store any leftovers in an airtight container at room temperature. This helps maintain its freshness and prevents it from becoming overly soggy. For those who enjoy an even crispier bite or wish to extend its shelf life slightly, placing it in the freezer can surprisingly keep it wonderfully crisp for a longer duration. Just be sure to bring it to room temperature for a few minutes before indulging!
Frequently Asked Questions About St. Patrick’s Day Popcorn
Here are some common questions to help you perfect your festive popcorn:
- Can I use any type of popcorn? Yes, but unbuttered or lightly salted popcorn works best as it allows the sweet white chocolate and mix-ins to shine. Air-popped or stovetop popcorn kernels are ideal.
- What if my white chocolate seizes or gets clumpy? This usually happens if the chocolate is overheated or if any moisture gets into it. Make sure your bowl and utensils are completely dry, and microwave in very short bursts, stirring well between each. Adding a touch of oil or shortening, as the recipe suggests, can also help.
- Can I prepare this in advance for a party? Absolutely! It’s a great make-ahead snack. Just ensure it’s stored properly in an airtight container to maintain freshness and crunch. For best texture, aim to make it no more than 1-2 days before your event.
- What if I can’t find Lucky Charms marshmallows? You can omit them or substitute with other festive green or rainbow-colored marshmallows, or even green candy pieces.
- Are there any other mix-in ideas? Get creative! Consider adding green chocolate-covered pretzels, mini green gummy bears, or even a drizzle of green candy melts for extra flair.

By Chelsea Lords
This St. Patrick’s Day Popcorn is a festive, sweet-salty snack! Popcorn gets coated in white chocolate and mixed with M&M’s, Lucky Charms marshmallows, and sprinkles. Perfect for parties or just a fun treat to share!
Prep Time: 20 minutes
Total Time: 20 minutes
Servings: 12 servings
Equipment
- Large sheet pan (15″ x 21″)
- Parchment paper or aluminum foil or a silicone baking mat
Ingredients
- 10 cups popped popcorn, unbuttered (see Note 1 below)
- 2 cups white chocolate chips or white chocolate melts
- 1-1/2 teaspoons vegetable oil or canola oil
- 1/2 cup M&M’s (pull out the greens, see Note 2 below)
- 1/2 cup pretzel M&M’s or crunchy cookie M&M’s (pull out the greens)
- 1/3 cup miniature M&M’s (pull out the greens)
- 1 cup Lucky Charms marshmallows (see Note 3 below)
- 1 to 2 tablespoons green sprinkles (optional)
Instructions
- Line an extra-large sheet pan with foil, parchment paper, or a silicone liner. Set aside. In a very large bowl, measure and add the popped popcorn. Separate out all the green M&M’s and marshmallows from the cereal. Measure and set aside.
- Place the white chocolate chips and oil in a microwave-safe bowl. Microwave in bursts of 30 seconds, stirring between each burst until chocolate is melted and smooth. Be patient to avoid burning the chocolate. Once smooth and fully melted, use a spatula to scrape it out and over the popcorn. Working quickly, toss together to coat in the white chocolate.
- Immediately add in all the M&M’s and the Lucky Charms marshmallows. Toss again to coat in the chocolate. Dump mixture onto prepared pan, spread in one layer, and immediately sprinkle with sprinkles (if using).
- Let the popcorn harden at room temperature or in the fridge until it becomes solid. Once solid, break it into pieces and enjoy!
Recipe Notes
Note 1: Pre-popped popcorn saves time but costs more. If you’d rather pop your own, use lightly salted microwave popcorn, a popcorn machine, or stovetop kernels. Whatever you use, measure out 10 cups and add a pinch of salt if needed.
Note 2: Mixing M&M® flavors makes this treat extra tasty, but using one or two types works great too. My favorite combo is plain, miniature, and either pretzel or crunchy cookie M&M’s.
Note 3: You can either use Lucky Charms marshmallows from the Leprechaun Trap cereal or the original cereal. (The Leprechaun Trap cereal was used in the pictures.)
Storage: Store any leftovers in an airtight container at room temperature. For the best flavor, eat within 1–2 days.
