  • 1/3 cup light brown sugar lightly packed
  • 3 tablespoons all-purpose flour
  • 1-1/2 teaspoons ground cinnamon
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
Wet Ingredients
  • 1 large egg at room temperature, see note 2
  • 2/3 cup light brown sugar lightly packed
  • 1/3 cup vegetable oil or canola oil
  • 1/3 cup Greek yogurt full-fat; or sour cream, at room temperature
  • 3/4 cup whole milk at room temperature

  • 2 tablespoons light brown sugar lightly packed
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Generously grease and lightly flour (or line with parchment paper) a 9×5-inch bread pan. Set aside.
  • Combine the cinnamon swirl ingredients (brown sugar, flour, ground cinnamon) in a small bowl. Stir until well combined and set aside.
  • In a large bowl, whisk together all the dry ingredients (flour, baking soda, ground cinnamon, salt) until thoroughly integrated.
  • In a separate large bowl, combine all the wet ingredients (egg, brown sugar, vegetable oil, Greek yogurt, whole milk). Briskly whisk with a regular whisk (do not use a hand or stand mixer to avoid overmixing) until the mixture is well combined and completely smooth. Once smooth, pour the wet ingredients into the dry ingredients. Gently mix with a wooden spoon, scraping the sides with a spatula as needed, until the ingredients are completely integrated and no white streaks of flour remain. As soon as you have a nice, smooth batter (a few lumps are okay), stop mixing immediately.
  • In another small bowl, stir the topping ingredients (light brown sugar, granulated sugar, ground cinnamon) together and set aside.
  • Spread half of the prepared bread batter evenly into your greased and floured (or parchment-lined) pan, gently pressing the batter all the way to the edges. Carefully spoon the cinnamon-swirl mixture in an even layer on top of the batter. Next, spread the remaining half of the bread batter over the cinnamon swirl. Gently smooth the top with a spatula or the back of a spoon into an even layer that reaches the edges of the pan (this may require some gentle coaxing to avoid disturbing the cinnamon sugar layer too much). Finally, sprinkle the topping ingredients evenly over the top (do not press them into the bread).
  • Place the bread in the preheated oven and bake for 60–75 minutes, or until a wooden toothpick inserted into the center comes out clean or with only moist crumbs attached. Remove the bread from the oven and let it cool in the pan for 15 minutes before carefully inverting it onto a wire rack to cool completely. It’s important to wait for at least 1 hour (or until fully cooled) before cutting into the loaf. Use a very sharp serrated knife to cut into even slices. If desired, you can add a vanilla glaze (see note 3) to the completely cooled bread.
