Ingredients (for 16 bars)

  • Cooking spray
  • 5 tablespoons unsalted butter
  • 1 (16-ounce) bag miniature marshmallows divided (approx. 8 cups for melting, 2.5 cups for stirring in at the end)
  • 6 cups Rice Krispies cereal
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line a 9×9-inch baking pan with parchment paper (or foil), ensuring an overhang on two sides for easy removal. Lightly spray the parchment with cooking spray. Set aside.
  2. In a large, heavy-bottomed pot, melt the unsalted butter over medium-low heat. Stir occasionally to prevent scorching. As soon as the butter is completely melted, reduce the heat to low. Add approximately 8 cups of the miniature marshmallows (reserving the remaining 2.5 cups for later).
