  • 1-1/2 cups vegetable stock (I love Swanson)
  • 1 (13.5-ounce) can full-fat coconut milk (see Note 2)
  • Cooked basmati rice for serving (see Note 3)
  • Optional serving suggestions: fresh lemon, cilantro, toasted coconut flakes, 1/4 teaspoon ground cayenne pepper, and raita (see Note 4)

Instructions

  1. Add melted coconut oil to a large pot and place over medium heat. Add the diced onion and sauté, stirring frequently, until it becomes golden and softened, which should take about 6–8 minutes. Next, stir in the minced garlic, ginger, tomato paste, all the dry seasonings (turmeric, coriander, cumin, paprika, curry powder), and salt and pepper to taste. (I typically use 1 teaspoon of salt and 1/2 teaspoon of pepper). If you enjoy a bit of heat, you can add an optional 1/4 teaspoon of cayenne pepper at this stage. Cook this mixture, stirring constantly, until it becomes incredibly fragrant and the tomato paste starts to darken slightly, approximately 3–4 minutes. If anything starts to stick or burn, reduce the heat slightly or add a tiny splash of water. The goal is to bloom the spices and deepen the flavor, not to scorch them.
  2. Pour in the vegetable stock, then use a spoon to scrape any browned bits from the bottom of the pan; this process, known as deglazing, adds immense flavor to the daal. Thoroughly rinse the red lentils in a fine-mesh sieve under cold running water until the water runs clear. Add the rinsed lentils and the full-fat coconut milk to the pot.   3. Once the lentils are tender, remove the pot from the heat. If using, stir in 1/2 teaspoon of fresh lemon zest and 2 tablespoons of fresh lemon juice; this brightens the flavors beautifully. Taste the daal and adjust the seasonings as needed, adding more salt, pepper, or other spices until it’s perfect for your palate. Note 1: Choosing and Preparing Lentils. For this specific recipe, using dried red lentils is crucial as they break down to create the desired creamy consistency. Other lentil varieties will yield a different texture. Before cooking, quickly sort through the lentils to check for any small debris or tiny rocks, then thoroughly rinse them under cold water in a fine-mesh sieve until the water runs clear. It’s important to rinse them right before adding them to the pot, as pre-rinsed lentils can start to thicken and stick together. Keep in mind that fresher dried lentils will generally cook quicker than older ones.

Note 2: Selecting Coconut Milk. Look for shelf-stable, unrefrigerated cans of full-fat coconut milk, typically found in the international aisle of your grocery store. Brands like Thai Kitchen® or Imperial Dragon® are reliable choices. I highly recommend using full-fat coconut milk for the best possible flavor and luxurious texture; lite coconut milk won’t thicken as nicely and will result in a less creamy daal.

Note 3: Perfect Basmati Rice. Here’s the easiest and quickest method to achieve perfectly fluffy basmati rice every time (this method works best specifically for basmati rice!):

  • Fill a large pot with water and bring it to a rolling boil.
  • Once the water is vigorously boiling, generously salt the water (similar to pasta water) and add your basmati rice.
  • Cook the rice without reducing the heat for exactly 6 minutes. After 6 minutes, taste a few grains to ensure they are tender but still have a slight bite. Immediately drain the rice using a fine-mesh sieve.
  • Return the drained rice to the empty hot pot, cover it, and let it steam for 5 minutes. Fluff with a fork before serving. Easy!
