Ingredients

  • 1 tablespoon olive oil
  • 5 tablespoons unsalted butter, divided
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • ¾ cup diced celery
  • 1 cup diced baby gold potatoes (no need to peel)
  • 1 tablespoon minced garlic
  • ¾ teaspoon dried thyme
  • ¾ teaspoon dried oregano
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 head cauliflower (about 4 cups chopped florets)
  • 3 cups chicken stock (or vegetable stock for vegetarian)
  • ¼ cup all-purpose flour
  • 2 cups whole milk (see Note 1 below)
  • 1 cup shredded sharp Cheddar cheese (see Note 2 below)
  • Fresh thyme (optional, for garnish)
  • Hearty buttered bread (for serving)

Instructions

  1. Sauté Veggies: Heat olive oil and 1 tablespoon butter in a large pot or Dutch oven over medium-high heat. Add onion, carrots, celery, potatoes, and garlic. Cook, stirring occasionally, for 8–10 minutes until softened. Stir in cauliflower, thyme, oregano, salt, and pepper.
  2. Simmer: Add chicken stock to the pot. Stir to combine, bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 10–15 minutes, or until all vegetables are tender (easily pierced with a fork).
  3. Make Cheese Sauce: In a separate small pot, melt the remaining 4 tablespoons butter over medium heat. Sprinkle flour evenly over the melted butter and whisk constantly for 1 minute. Gradually add milk while whisking continuously. Cook for 5–6 minutes until the sauce has thickened beautifully (do not boil). Remove from heat and stir in the shredded cheddar cheese, a handful at a time, until completely melted and smooth.
  4. Combine & Blend: Reduce the heat of the main soup pot to low. Pour the prepared cheese sauce into the soup and stir gently to combine. Taste and adjust seasoning with additional salt and pepper as desired (about 1/4 teaspoon more of each, or to taste). For an extra creamy soup, you can blend 1–2 cups of the soup with an immersion blender and stir it back into the pot, or blend the entire pot for a completely smooth consistency.
  5. Serve: Ladle the warm soup into bowls. Garnish with more shredded cheese and fresh thyme, if desired. Serve immediately with toasted, buttered bread. Enjoy your homemade cauliflower soup!
