  • Pour in the chicken broth, water, and heavy cream. Use a sturdy wooden spoon to thoroughly deglaze the bottom of the pot, scraping up any browned bits that may be stuck. This step is crucial to prevent a “burn” notice during pressure cooking and to incorporate all the delicious flavors. Stir the liquids and seasonings well to combine. Gently pour the uncooked ziti pasta into the pot, spreading it out evenly. Note 5: Ziti Pasta. For the best authentic baked ziti texture and sauce-holding capability, stick with ziti pasta. If ziti is not available, choose a similar-sized tube pasta like penne or rigatoni. Ensure that the recommended boiling time on the package is comparable to that of ziti to achieve a similar tenderness without overcooking in the Instant Pot.

Note 6: Parmesan Cheese. For a smooth, creamy sauce, always add freshly grated Parmesan cheese slowly, in small increments.
