Cowboy Caviar - An Easy Corn and Bean Salad or Dip Recipe

Ingredients

  • 2 ears of corn, cooked (we boiled ours and then tossed it on the grill for a couple of minutes for flavor)
  • 1 15oz can Mrs. Grimes Black Beans
  • 1 15oz can Mrs. Grimes Dark Red Kidney Beans
  • 1 tomato, diced
  • ½ red onion, chopped
  • ½ green bell pepper, chopped
  • a handful of cilantro, chopped
  • juice of one lime
  • salt, to taste
  • pepper, to taste

Instructions

  1. 1

    Cook corn by boiling for 5 minutes or until corn is fork tender. Toss on a hot grill for 1-2 minutes to flavor and add color.

    Drain and rinse both cans of beans.

    Dice tomato, chop onion, bell pepper and cilantro.

    Cut lime in half.

    Combine all ingredients, squeezing the juice of the lime over them and then stirring to mix everything.

    Top with salt and pepper, to taste.
