  • Cooking spray
  • 6 medium zucchini, cut in half lengthwise
  • 2 tablespoons olive oil, divided
  • 1 pound lean ground turkey (90/10), or lean ground beef
  • 1/2 cup diced yellow onion (1/2 of an onion)
  • 2 teaspoons minced garlic (2 cloves)
  • 1 tablespoon ground chili powder (McCormick is mild)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons beef bouillon powder
  • 1 (14.5-ounce) can fire-roasted crushed tomatoes (I love Muir Glen)
  • 1 (10-ounce) can mild enchilada sauce (I use Old El Paso; it is mild)
  • 3/4 cup frozen corn
  • 3/4 cup black beans, drained and rinsed
  • 2 to 3 tablespoons chopped cilantro, plus some for topping if desired
  • 1-1/2 cups sharp Cheddar cheese, freshly shredded
  • 1 lime, optional, for topping with lime juice

Instructions

  • Preheat oven to 400°F (200°C). Spray both a 9×13-inch and an 8×8 or 9×9-inch baking dish with cooking spray and set aside.
  • Cut the zucchinis in half lengthwise. Use a small spoon (a 1-teaspoon measuring spoon works great) to carefully scoop out the flesh and seeds, leaving a firm border along the edges of each zucchini half. Place the zucchini halves in the prepared baking dishes, ensuring they are not overcrowded (see Note 1). Drizzle 1 tablespoon of olive oil over them, rub the oil in, and add a small sprinkle of salt and pepper (the filling is salted, so just a pinch here!). Bake for 5 minutes, then remove from the oven and set aside.
  • While the zucchini bakes, heat the remaining 1 tablespoon of olive oil in a large pan over medium heat. Add the diced onion and cook for 3-5 minutes, or until the onion starts to become translucent. Add the minced garlic and cook, stirring constantly, for 30 seconds until fragrant. Stir in the chili powder, cumin, paprika, onion powder, garlic powder, dried oregano, salt, pepper, and beef bouillon powder, cooking and stirring constantly for another 30 seconds until aromatic. Push the mixture to the sides of the pan and add the ground turkey (or beef) to the middle. Break up the turkey into small crumbles with a wooden spoon and cook until it is no longer pink and cooked through, about 5-7 minutes. Drain off any excess liquid if needed.
  • Add the fire-roasted crushed tomatoes and enchilada sauce to the pan with the meat mixture. Stir to combine, bring to a gentle simmer, and allow to simmer for 3-5 minutes to let the flavors meld. Stir in the frozen corn, drained and rinsed black beans, and chopped cilantro. Mix until all ingredients are well combined.
  • Spoon the prepared meat mixture evenly into the pre-baked zucchini shells. This amount should perfectly fill approximately 10 medium zucchini halves (see Note 2). Evenly sprinkle the freshly shredded sharp Cheddar cheese over the top of each filled zucchini boat.
  • Bake the filled zucchini boats for 20-25 minutes, or until the zucchini is crisp-tender (it should still have a slight bite and not be mushy!) and the cheese is beautifully melted and bubbly. If desired, garnish with additional fresh cilantro and a squeeze of fresh lime juice before serving. Enjoy immediately!
