  • 2 limes (for 3 tablespoons juice and 1/2 teaspoon zest)
  • 1/3 cup water
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste (recommended: 1/2 teaspoon salt, 1/4 teaspoon pepper)
Tacos
  • 8 extra thin small corn tortillas (e.g., Mission’s extra thin)
  • 1-1/2 cups homemade pinto beans (see Note 1) or 1 can refried beans
  • 1/2 head small green cabbage, finely shredded (about 2-1/2 cups)
  • Optional Toppings as desired (see Note 2)

Instructions

  1. Prepare Pinto Beans: Refer to Note 1 for details on preparing homemade pinto beans or warming refried beans.

  2. Make Cilantro-Cashew Sauce: Place cashews in a heatproof bowl and pour about 1 cup of boiling water over them. Let stand for 45 minutes to an hour, then thoroughly drain. Add the drained cashews, fresh cilantro, 3 tablespoons lime juice, 1/2 teaspoon lime zest, water, olive oil, garlic powder, and salt and pepper to taste (we recommend 1/2 teaspoon salt and 1/4 teaspoon pepper) to a small, powerful blender. Blend until completely smooth and creamy. Refrigerate the sauce to allow the flavors to intensify and meld. This sauce can be made ahead of time; simply stir well before serving.

  3. Prepare Quick Pickled Red Onions: In a medium bowl, combine the thinly sliced red onion, red wine vinegar, salt, and granulated sugar. Toss everything together to ensure the onions are well coated. Let them stand at room temperature, tossing every 5 minutes or so, while you prepare the rest of your meal. You might have some extra pickled onions, which are great for other dishes and will keep in the fridge for up to 5 days.

  4. Make Saucy Cabbage Slaw: Place the shredded cabbage in a large bowl. Drizzle approximately half of the prepared cilantro-cashew sauce over the cabbage (eyeball the amount). Use tongs to toss the cabbage thoroughly until it’s evenly coated. Place the saucy cabbage in the fridge until ready to serve.

  5. Prepare Tortillas: Refer to Note 2 for detailed instructions on charring your tortillas. Whether you use a gas flame or a skillet, the goal is to make them lightly charred, soft, and pliable.

  6. Assemble Tacos: Once your tortillas are heated, it’s time to assemble! Spread about 3–4 tablespoons of the warm pinto beans down the center of each tortilla. Top generously with the saucy cabbage, a desired amount of quick-pickled red onions, and any optional toppings such as fresh corn, thinly sliced avocado, and cotija cheese.
