  2. Prepare the chicken: Pat chicken breasts dry with a paper towel. Slice each breast in half horizontally to create four thinner pieces. Remove the chicken and let it rest for 5 minutes before chopping it into bite-sized pieces or slicing into thin strips against the grain.
  4. Pan-Frying Method: Add 1 tablespoon of olive oil to a large pan and heat to medium-high. Once hot, add the chicken and cook for 6–7 minutes per side, until cooked through (internal temperature 165°F, no longer pink in the center, and juices run clear). Remove the cooked chicken and let it rest for 5 minutes. Chop the chicken into bite-sized pieces or slice into thin strips against the grain.
  5. While the chicken is cooking, prepare the salsa. Drain and rinse the black beans and transfer them to a large bowl. Dice the mango (you should yield about 1 ½ cups) and add to the bowl. Stir in the finely diced red onion, red pepper, chopped cilantro, 2 tablespoons of lime juice, and ground cumin. Mix everything together.
