Hey there, fellow breakfast lovers! If you're anything like me, mornings can feel like a sprint - especially when everyone's rumbling stomachs wake up before your brain does.

That's why I've revamped this old blog post to bring you a much-improved take on my favorite make-ahead pancake mix. It's equal parts convenience and deliciousness!

This Make-Ahead Pancake Mix Is...

Key Ingredients

  • Flour - 1 cup all‑purpose flour. You can swap in whole wheat or gluten-free blends if you prefer.
  • Sugar - 2 tablespoon brown sugar. White sugar works too, but I like the richer flavor of brown sugar.
  • Baking powder - 2 teaspoon will make your pancakes nice and fluffy.
  • Salt - ½ teaspoon to balance the sweetness.

How to Make (& Use!) The Pancake Mix

Simply combine the dry ingredients (flour, sugar, baking powder, and salt) in an airtight container. I like to use mason jars - cute and functional. This is your dry pancake mix!

When you are ready to prepare the pancakes, whisk together one cup of your pancake mix, ¾ cup milk, 1 egg, and 2 tablespoon oil. Stir until it's well combined. Then let the batter rest for 5 minutes.

Then cook your pancakes as normal. Spoon ¼ cup of batter onto a greased, medium-hot skillet. Flip when bubbles appear. Repeat until all your pancakes are cooked.

Serve the pancakes with butter, syrup, fresh fruit - or whatever strikes your fancy.

Helpful Tips

Fresh leavener gives fluffy pancakes. So double-check your baking powder's expiration date before you get started.

Use mason jars. Layering the dry mix in mason jars makes for a really cute presentation. Add a fun label and these make a great homemade gift for your favorite foodies!

Rest your batter. Just a 5-minute break between mixing your pancake batter and cooking makes a noticeable difference. Be patient.

This Make-Ahead Pancake Mix is SO easy to throw together, and making multiple batches is a breeze, especially if you have a handful of Mason jars on hand.

Fun Variations

Cinnamon Twist: Add 1 teaspoon ground cinnamon to the dry ingredients.

Banana Walnut Pancakes: When preparing, add half of a mashed banana and a sprinkle of chopped walnuts.

Pumpkin Spice: When preparing, add ½ cup canned pumpkin and ½ teaspoon pumpkin spice seasoning for a fun Fall twist.

Berry Chocolate Chip: When preparing, toss in fresh berries and a handful of chocolate chips for a fun flavor combo. (Or try funfetti pancakes for a whole new level of fun!)

Whole Grain Boost. Swap half the all-purpose flour for whole wheat or oat flour.

Homemade Pancake Mix (for Make Ahead Breakfasts!)

Ingredients

Dry Pancake Mix

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

For Preparing the Pancakes

  • ¾ cup milk
  • 2 tablespoon vegetable oil, or other oil of choice

Instructions

    Add all ingredients (flour, brown sugar, baking powder, and salt) to an airtight container. You can use a food storage container, jar, or even a Ziploc bag. Store in a cool, dry location until ready for use.

    When ready to make pancakes, mix together the dry pancake mix (approximately 1 cup), egg, milk, and oil. Add additional milk in tablespoon increments if the batter seems dry.

    Cook the pancakes as normal. Drop batter onto a greased, medium-hot pan. When it begins to bubble, flip and cook other side. Remove from heat and repeat for all pancakes.

    Serve with toppings such as butter, honey, or maple syrup.

Notes. The number of pancakes in a batch depends largely on the size of your pancakes. But I typically get about 6 pancakes per 1 cup of dry mix. Note that the nutrition facts for this recipe are approximate values for each pancake.
