This recipe is truly so easy to throw together. If you can preheat an oven and brown ground beef on the stovetop, you can handle this one. There are only a handful of ingredients, most of which are probably already in your fridge, freezer and pantry, and the whole family can pitch in.

Key Ingredients & Substitutions

  • Ground beef. An 85% or 90% lean beef gives you plenty of flavor without a greasy casserole. Ground turkey, ground chicken or even crumbled plant-based meat all work; just add a splash of oil to the skillet if you use very lean poultry.
  • Taco seasoning. One 1-ounce packet, such as McCormick Original Taco Seasoning Mix, seasons a full pound of meat. If you'd rather control the salt and spice, mix up a batch of our DIY Taco Seasoning and use about 3 tablespoons.
  • Shredded cheddar cheese. The original version of this recipe used a triple cheddar blend, but any shredded cheddar, Colby Jack or Mexican-style blend melts beautifully. Use about 1 ¼ cups, or go up to 2 cups if your family likes it extra cheesy.
  • Frozen tater tots. One 16-ounce bag covers an 8x8-inch dish in a single layer. There's no need to thaw them; they go straight from the freezer onto the casserole. Seasoned or crowns-style tots are fun swaps.
  • Sour cream and green onions. These cool, fresh toppings balance the rich, savory casserole. Plain Greek yogurt is a lighter stand-in for the sour cream, and chopped cilantro can replace the green onions.

Helpful Tips

Drain the beef well. Pour off the fat after browning and before adding the seasoning. Excess grease pools at the bottom of the dish and makes the tater tots soggy from underneath.

Let the taco sauce thicken. Simmer the meat with the seasoning and water until the liquid has mostly cooked off and coats the beef. A thick filling holds up under the tots, while a watery one steams them instead of letting them crisp.

Pack the tots in a snug single layer. Line them up in neat rows so they touch, covering the whole top. This gives you a crisp, even crust in every scoop. A deep glass dish like this Pyrex 8x8 baking dish is the perfect size and lets you see when the edges are bubbling.

Variations

  • Add beans. Stir a drained can of black beans or pinto beans into the taco meat to stretch it further and add fiber.
  • Make it saucy. Mix a drained can of diced tomatoes with green chiles or a half cup of salsa into the meat for a juicier, zestier filling.

Notes. Baking dish: this recipe fills an 8x8-inch or 9x9-inch dish. To bake it in a 9x13-inch dish, double every ingredient (2 pounds of beef and a 32-ounce bag of tots) so the tots cover the top. Crispier tots: for extra-crunchy tots, bake at 400°F for 25 to 30 minutes instead. Make ahead: assemble the casserole up to 24 hours ahead, cover and refrigerate, and add 5 to 10 minutes to the baking time.
