Bake for 5–6 minutes, or until the shrimp are opaque and fully cooked through, and the veggies are crisp-tender. Optional step: For extra char on your vegetables, remove the shrimp tray, move the veggies to the top rack, and turn the oven to broil for 1–2 minutes, watching closely to prevent burning. Alternatively, you can cook the veggies for 5 or so minutes longer if you prefer them more tender (I personally enjoy them with a slight bite!).
  • Serve with Toppings: Add 2 tablespoons of fresh lime juice and the finely chopped cilantro to the cooked shrimp and toss gently to combine. While the shrimp and veggies are cooking, prepare or warm your tortillas (refer to Note 2 below for methods) and arrange all your desired toppings. If you didn’t remove the tails from the cooked shrimp before baking, do so now. Fill warm tortillas with a generous scoop of the shrimp and veggie mixture, then add your favorite toppings such as diced avocado or guacamole, a big dollop of sour cream, pico de gallo or salsa, shredded lettuce, and cheese.
