Why This is The Best Cornbread Dressing You’ll Ever Make

This isn’t just *a* cornbread dressing recipe; it’s *the* recipe, an absolute essential on my Thanksgiving table every single year. Honestly, if given the choice, I’d even prioritize a generous helping of this dressing over the turkey itself! What makes it so utterly irresistible? It’s the thoughtful blend of ingredients and a simple technique that transforms humble bread into a moist, flavorful, and perfectly textured culinary delight.

The secret lies in the masterful combination of two distinct bread types. The inclusion of fluffy, slightly sweet cornbread adds an incredible depth of flavor and a subtle sweetness that distinguishes this dressing from traditional bread stuffings. This unique sweetness beautifully balances the tangy, crusty notes of the sourdough bread, creating a complex and incredibly satisfying taste profile. The tender cornbread absorbs the rich liquid, while the sourdough maintains some structure, ensuring every bite offers a delightful textural contrast – never soggy, always sublime.

Beyond the bread, the aromatic foundation is built upon fresh, seasonal herbs. Onions, celery, and garlic are slowly sautéed in rich melted butter, allowing their flavors to meld and intensify. This savory base is then generously infused with a medley of fresh herbs: fragrant rosemary, earthy sage, pungent thyme, subtle oregano, and bright parsley. This harmonious combination doesn’t just elevate the flavor of your cornbread dressing to new heights; the intoxicating aroma will permeate your entire home, signaling that the holidays have truly arrived. It’s an experience for all the senses, promising warmth, tradition, and deliciousness.

Essential Ingredients for Perfect Cornbread Dressing

Crafting the perfect cornbread dressing starts with selecting quality ingredients. Each component plays a vital role in achieving that rich flavor and delightful texture that makes this dish a holiday favorite. Here’s a closer look at what you’ll need and why:

  • Sourdough and Cornbread: The foundation of our dressing. It’s crucial to bake these bread cubes until they are thoroughly dry. This step prevents your dressing from becoming a soggy mess, ensuring a wonderfully crisp exterior and a moist, flavorful interior. Using day-old cornbread is ideal for the best texture.
  • Unsalted Butter: The rich, creamy base for sautéing our aromatics. Using unsalted butter gives you complete control over the overall salt level of your dish, allowing you to season it perfectly to your taste.
  • Onion and Celery: These classic aromatics provide the savory backbone of the dressing. Cook them slowly until they are tender and just beginning to lightly brown. This gentle caramelization adds a deep, complex flavor that is essential to the dish.
  • Garlic: A culinary powerhouse that infuses the entire dressing with its irresistible aroma and robust flavor. Minced garlic, when gently sautéed, releases its sweet and pungent notes, enhancing all the other ingredients.
  • Fresh Herbs (Parsley, Sage, Rosemary, Thyme, Oregano): The heart and soul of this dressing’s flavor profile. A generous amount of fresh herbs—rosemary, sage, thyme, oregano, and parsley—creates an incredibly fragrant and authentic taste. While fresh is best, a pre-packaged poultry herb blend can be a convenient and time-saving option, especially during the busy holiday season. For vegetarian versions, ensure all ingredients, especially the stock, align with dietary preferences.
  • Chicken Stock: This liquid gold binds the dressing together, adding moisture and a savory depth. Chicken broth works equally well. For a vegetarian or vegan dressing, simply substitute with a high-quality vegetable broth to maintain the rich flavor.
  • Eggs: Act as a binder, helping the dressing hold its shape and contributing to its tender, cohesive texture. Be sure to whisk the eggs thoroughly with the chicken stock before incorporating them into the bread and vegetable mixture to ensure even distribution and prevent scrambling.

Quick Tip: Choosing the Right Parsley

For this recipe, make sure to seek out flat-leaf Italian parsley, as opposed to its curly counterpart. Flat-leaf parsley boasts a more robust, peppery flavor that truly stands out in savory dishes like this dressing. Curly parsley, while visually appealing, is typically milder and more commonly used as a garnish. The intense flavor of flat-leaf parsley will significantly enhance the overall taste of your cornbread dressing.

Step-by-Step Guide: How to Make Cornbread Dressing

Creating this delicious cornbread dressing is a straightforward process, but each step is vital for achieving the perfect texture and flavor. Follow these instructions carefully, and you’ll be rewarded with a holiday side dish that everyone will rave about.

  1. Prepare and Dry the Bread: Begin by preheating your oven to 250°F (120°C). Generously grease a 9×13-inch baking pan with cooking spray and set it aside. Cut both the sourdough and cornbread into equal 1-inch cubes. The goal here is uniformity, which ensures even drying and cooking. Spread the cubes in a single layer on a large, rimmed sheet pan (approximately 15×21 inches). Bake for 45 minutes, making sure to gently stir the bread and cornbread cubes every 15 minutes. This prevents burning and promotes even drying. The bread should be completely dry and slightly crisp, but not hard. This step is crucial to prevent a soggy dressing. Once dried, remove from the oven and allow to cool completely. Increase the oven temperature to 350°F (175°C) for baking the final dish.
  2. Sauté the Vegetables: In a large skillet, melt the unsalted butter over medium-low heat. Add the finely diced yellow onions, thinly sliced celery, and minced garlic. Cook this mixture slowly, stirring occasionally, for about 10-15 minutes. The vegetables should become tender and just begin to lightly brown, indicating that their natural sugars are caramelizing and developing a deeper flavor. While the vegetables are cooking, take this time to finely chop all your fresh herbs.
  3. Infuse with Herbs and Season: Once the vegetables are tender and fragrant, stir in all the finely chopped fresh herbs: parsley, sage, rosemary, fresh oregano, and thyme. Cook for just 1-2 minutes, allowing the herbs to release their aromatic oils. Season generously with salt and freshly ground black pepper to taste. A good starting point is about 1 teaspoon of salt and 1 teaspoon of pepper, but adjust according to your preference and the saltiness of your stock. Remove the pan from the heat and let the mixture cool slightly. This is important to prevent the eggs from scrambling in the next step.
  4. Combine Liquids: In a separate medium-sized bowl, whisk the two large eggs with a fork until they are smooth and well-beaten. Pour in the chicken stock (or vegetable broth for a vegetarian option) and whisk again until the mixture is completely smooth and cohesive.
  5. Assemble the Dressing: Pour the egg and stock mixture into the slightly cooled skillet with the butter, herbs, and vegetables. Stir gently to combine all the ingredients. The mixture should be warm, but not hot enough to scramble the eggs. Now, add the dried cornbread and sourdough cubes to the pan. Stir very gently, using a large spoon or your hands, until all the bread and cornbread pieces are evenly coated with the flavorful liquid and vegetable mixture. Be careful not to mash the bread; gentle handling is key to maintaining texture.
  6. Bake to Perfection: Transfer the entire dressing mixture into your prepared 9×13-inch baking dish, spreading it out evenly. Bake in the preheated 350°F (175°C) oven for 45-60 minutes, or until the top is beautifully golden brown and crisp, and the interior is hot and bubbling. The exact baking time may vary depending on your oven, so keep an eye on it. Once baked, remove from the oven and serve immediately while it’s still warm and fragrant.

Storage and Make-Ahead Tips for Your Cornbread Dressing

To make your holiday cooking experience smoother, careful planning and proper storage are key for this cornbread dressing:

Prep Ahead: Preparing components of the dressing in advance can significantly reduce stress on the main cooking day. Plan for at least an hour for the bread drying process. The cornbread and sourdough cubes can be baked until dry up to 1 day in advance. Once cooled, store them in an airtight container or a large zip-top bag at room temperature. This ensures they remain perfectly dry and ready for assembly. You can also chop your onions, celery, and garlic, and finely dice your fresh herbs the day before and store them separately in airtight containers in the refrigerator.

Make Ahead: For ultimate convenience, you can completely assemble the cornbread dressing the day before you plan to bake it. Follow all the recipe steps right up until the baking stage (Step 6). Instead of baking, cover the casserole dish tightly with aluminum foil and refrigerate it overnight. On the day of serving, remove the dressing from the fridge and allow it to come to room temperature for at least 30-60 minutes before baking. This helps ensure even heating. You may need to add an extra 10-20 minutes to the baking time to account for starting with a cold dish. I generally do not recommend assembling this dish more than a day in advance, as the bread can absorb too much liquid and become overly soft.

Storage: This cornbread dressing is truly best enjoyed fresh, straight out of the oven when the top is crisp and the interior is wonderfully moist. Leftovers, while still delicious, tend to lose some of their ideal texture, becoming softer over time. To store leftovers, transfer them to an airtight container and refrigerate promptly. Consume within 2-3 days for the best quality. Unfortunately, this dish does not freeze well, as the texture of the bread and vegetables can become mushy upon thawing and reheating. It’s best to enjoy it while it’s fresh and vibrant!

Cornbread Dressing

By Chelsea Lords
My family’s favorite Thanksgiving Cornbread Dressing! This dressing has tender sweet cubes of cornbread tossed with crusty sourdough bread and the perfect combination of fresh and seasonal herbs.
Prep Time: 35 minutes
Cook Time: 50 minutes
Total Time: 1 hour 25 minutes
Servings: 14 servings

Equipment

  • 9 x 13-inch baking pan
  • Large sheet pan (15″ x 21″)
  • Large skillet

Ingredients

  • 6 cups sourdough bread cut into 1-inch cubes
  • 4 cups day-old cornbread cut into 1-inch cubes
  • 11 tablespoons unsalted butter
  • 2-1/2 cups finely diced yellow onion (2 medium onions)
  • 1-1/3 cups thinly sliced celery (6 to 8 stalks)
  • 2 teaspoons minced garlic (3 to 4 cloves)
  • 1/2 cup fresh flat-leaf parsley finely diced
  • 2 tablespoons fresh sage finely diced, see note 1
  • 1 tablespoon fresh rosemary finely diced
  • 1-1/2 tablespoons fresh thyme finely diced
  • 1 teaspoon fresh oregano finely diced
  • Salt and pepper
  • 1-1/4 cups chicken stock
  • 2 large eggs

Instructions

  1. Preheat oven to 250°F (120°C). Generously grease a 9×13-inch baking pan with cooking spray and set aside.
  2. Cut the sourdough and cornbread into equal 1-inch cubes; place both on a large, rimmed sheet pan (15×21 inches). Bake for 45 minutes, gently stirring the bread and cornbread cubes every 15 minutes, or until completely dried. Remove from oven and set aside to cool. Increase oven temperature to 350°F (175°C).
  3. Melt the butter in a large skillet over medium-low heat. Add diced onions, celery, and garlic and cook, stirring occasionally, until veggies are tender and just beginning to lightly brown, about 10–15 minutes. While veggies are cooking, finely chop the herbs.
  4. Add all the fresh chopped herbs: parsley, sage, rosemary, fresh oregano, and thyme to the butter and veggie mixture. Add salt and pepper to taste (I use about 1 teaspoon salt and 1 teaspoon pepper). Remove pan from heat and let it cool slightly.
  5. In a separate bowl, whisk the eggs with a fork until smooth. Pour in the chicken stock and whisk again until smooth. Pour this mixture into the slightly cooled pan with the butter and herbs and gently stir to combine. (If the pot is super hot, you’ll scramble the eggs!)
  6. Add the cornbread and bread cubes to the pan. Stir very gently until all ingredients are combined and the bread/cornbread is well coated.
  7. Transfer this mixture to the prepared 9×13-inch baking dish. Bake for 45–60 minutes or until browned and crisp on top. Remove and serve immediately.

Recipe Notes

Note 1: Fresh herbs can be pricey, but around Thanksgiving, look for a fresh poultry herb blend with rosemary, sage, and thyme. Just add parsley and swap 1/4 teaspoon dried oregano if needed—or skip it!

Prep ahead: Bread cubes can be baked up to 1 day in advance. Store in an airtight container at room temperature.

Make ahead: Completely assemble the ingredients according to the recipe right up until baking. Instead of baking, cover the casserole dish tightly and refrigerate. The next day, remove the dressing from the fridge, allow it to come to room temperature, then bake in a preheated oven. You may need to add some baking time to the dressing. I don’t recommend making this dish more than a day in advance.

Storage: Best enjoyed fresh. Leftovers lose their texture and don’t freeze well, so try to eat this dish within a few days.
